Easy Bread Toast Kiwi Pies

Whip up a delightful dessert using leftover bread from your fridge and fresh kiwi! These super simple toast pies, filled with a tangy and sweet kiwi compote, are perfect for a quick snack or for entertaining guests. They boast a crispy exterior and a vibrant, fruity filling. Essential Ingredients- 3 fresh kiwis
- 60g granulated sugar (approx. 4 Tbsp)
- 1 Tbsp fresh lemon juice
- 3 slices soft bread (toast bread)
- 1 fresh egg
Cooking Instructions
Step 1
First, peel the 3 kiwis and dice them into small, approximately 1cm cubes. Cutting them uniformly will ensure the compote cooks evenly.
Step 2
Measure out 60g of granulated sugar to add a basic sweetness. You can adjust the sugar amount to your preference.
Step 3
Heat a pan over medium heat. Add the diced kiwis and all the prepared sugar. Stir and bring to a boil. The kiwi will release its juices and become moist.
Step 4
Once the kiwi turns translucent and the fruit pieces start to soften, reduce the heat to low. Continue to simmer gently, stirring with a spatula to prevent sticking, until a rich kiwi compote is formed.
Step 5
When the kiwi compote has thickened slightly, stir in 1 tablespoon of fresh lemon juice for a touch of tanginess and cook for another 1-2 minutes. Turn off the heat once the liquid has reduced and the mixture becomes thick like jam. Let it cool slightly; it will firm up more as it cools.
Step 6
In a small bowl, crack 1 fresh egg and whisk it thoroughly to create an egg wash. This will be used to brush the edges of the bread.
Step 7
Trim the crusts off the 3 slices of soft bread. Use a rolling pin to flatten and widen each slice of bread. This helps in shaping the pies nicely and makes them easier to fold later.

Brush the egg wash evenly along the four edges of each flattened bread slice. Then, make 2-3 shallow slits in the center of the top side of the bread. Generously spread the cooled kiwi compote onto the bottom side of the bread (the side without slits).
Step 9
Fold the top side of the bread (with the slits) over the filling, encasing the kiwi compote. Use a fork to press down firmly along the edges, sealing the pie and creating a decorative pattern.
Step 10
Brush the top surface of the assembled toast pies with the remaining egg wash. This will give them a beautiful golden-brown color when baked. Preheat your air fryer to 190°C (375°F) and bake for about 7 minutes until golden and crisp. (For an oven, bake at 180°C (350°F) for 10-12 minutes).
