Easy Braised Raw Peanuts Recipe

This is an incredibly easy and speedy side dish that perfectly balances sweet and salty flavors with a nutty aroma, using just soy sauce, oligosaccharide, and sesame seeds. It’s a quick pantry staple you can whip up in no time!
Ingredients- 300g Fresh Raw Peanuts
- 3 Tbsp Soy Sauce (Jin Ganjang)
- 3 Tbsp Oligosaccharide
- 1 cup Broth or Water (200ml)
- Sesame Seeds, for garnish
Cooking Instructions
Step 1
First, prepare 300g of fresh raw peanuts. Rinse them a couple of times in water to remove any dirt or debris, then drain. To reduce any astringency and tenderize the peanuts, place them in a pot with enough water to cover, and boil for about 10 minutes. (This is from the boiling point.)
Step 2
Drain the boiled peanuts thoroughly using a colander. Discard the boiling water and give the peanuts a quick rinse. This step further helps to reduce any lingering astringent taste and ensures a cleaner flavor.
Step 3
Now, let’s make the braising sauce. Place the rinsed peanuts back into the pot. Add 1 cup (200ml) of broth or water – enough to generously cover the peanuts – along with 3 Tbsp of soy sauce. Bring this mixture to a boil over medium-high heat, then reduce to medium-low heat to allow the flavors to meld and the peanuts to absorb the sauce.
Step 4
Simmer over medium-low heat for about 10-15 minutes, allowing the liquid to reduce until it’s syrupy. When the liquid has significantly reduced and the sauce starts to thicken around the peanuts, stir in 3 Tbsp of oligosaccharide. Mix well quickly. Be careful not to overcook after adding the oligosaccharide, as it can burn easily. Stirring briskly will help achieve a glossy finish.
Step 5
Finally, just before turning off the heat, sprinkle generously with sesame seeds for added nutty flavor. Mix well to distribute. Your delicious braised raw peanuts are ready! They taste great warm and become even chewier and firmer as they cool. They’re the perfect side dish for rice!
