Main Ingredients
  • Beef 200g (1 serving, tenderloin or your preferred cut)

Galbi Marinade
  • 2 handfuls chopped green onion (approx. 3-4 Tbsp)
  • 5 Tbsp soy sauce
  • 4 Tbsp water
  • 3 Tbsp sugar
  • 2 Tbsp mirin (rice wine)
  • 1 Tbsp garlic powder (or 1 Tbsp minced garlic)
  • 1/4 Tbsp ginger powder (or 1/4 Tbsp grated ginger)
  • Pinch of black pepper
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare about 200g of beef per serving. I used tenderloin for its tenderness, but other cuts like sirloin or ribeye are also suitable. If you haven’t already, thaw the beef overnight in the refrigerator and drain any excess blood. Slicing the beef to a thickness of less than 1cm will result in a more tender and easier-to-chew texture.

Step 2

To help the marinade penetrate better, score the beef diagonally with a knife. After scoring, pat the beef thoroughly dry with paper towels. This step is crucial for the marinade to adhere well and infuse the meat with flavor.

Step 3

In a 500ml airtight container, prepare the marinade. Combine 5 Tbsp soy sauce, 4 Tbsp water, 3 Tbsp sugar, 2 Tbsp mirin, 1 Tbsp sesame oil, 1 Tbsp garlic powder (or 1 Tbsp minced garlic), 1/4 Tbsp ginger powder (or 1/4 Tbsp grated ginger), and a pinch of black pepper. Mix everything until well combined. It’s okay if the powder ingredients are not completely dissolved.

Step 4

Place the scored beef into the container with the marinade. Ensure the beef is well coated. The amount of marinade should fit perfectly in the container with the beef. Marinate in the refrigerator for at least 6-7 hours, or preferably overnight, for the best flavor infusion.

Step 5

Arrange the marinated beef evenly in your rice cooker pot. Select the ‘reheat’ function and set it for 9 minutes. (Refer to your rice cooker’s manual for specific instructions, as models may vary. If your rice cooker doesn’t have a ‘reheat’ function, you can use the ‘cook’ function and manually stop it after 9 minutes.) The beef cooks quickly.

Step 6

Serve the delicious rice cooker beef Galbi-style BBQ hot. Note that the beef will shrink slightly as it cooks. The juices released during cooking are incredibly flavorful; try mixing them with rice for an extra treat! Enjoy this delightful home-cooked meal.
