A Delightful Cheesy Potato Dip Perfect as a Kid’s Snack

Easy Baked Cheese Potato Dip

I made a delightful cheesy potato dip as a snack for the kids. I think I enjoyed it more than they did! Potatoes and cheese are a perfect match, aren’t they? The gooey cheese in the soft potatoes adds a wonderful savory flavor, making it irresistible.

Main Ingredients

  • 3 small potatoes
  • 2 Tbsp plain yogurt
  • 2 Tbsp oligosaccharide (or honey/corn syrup)
  • 3 Tbsp mayonnaise
  • 1 Tbsp grated Parmesan cheese
  • 1/4 onion, finely minced
  • 150g shredded pizza cheese
  • Pinch of dried parsley (for garnish)

Cooking Instructions

Step 1

First, prepare 3 small potatoes. Peel them thoroughly and cut them into about 4-6 pieces each. Place the cut potatoes in a pot, cover with water, and boil until tender. This should take around 15-20 minutes.

To check if the potatoes are cooked, gently poke them with a chopstick or fork. If it slides in easily, they are done. Drain the potatoes well and set them aside.

It’s best to mash the potatoes while they are still hot! Transfer the hot, drained potatoes to a bowl. Using a fork or a potato masher, mash them until smooth and creamy. Ensure there are no large lumps left.

Now, let’s add the delicious seasonings to the mashed potatoes. Mix in 2 Tbsp of plain yogurt, 2 Tbsp of oligosaccharide, 3 Tbsp of mayonnaise, and 1 Tbsp of grated Parmesan cheese until well combined. Add the finely minced 1/4 onion and 50g of shredded pizza cheese, and mix again until everything is evenly incorporated.

Next, transfer the mixture to an oven-safe dish. Spread the potato mixture evenly in the dish. Sprinkle the remaining 100g of shredded pizza cheese generously over the top. Finish with a pinch of dried parsley for a nice color and aroma. Bake in a preheated oven at 180°C (350°F) for 10-15 minutes, or until the cheese is melted and bubbly and lightly golden brown.

Finally, prepare the zesty sauce. In a small bowl, mix 2 Tbsp of ketchup with 1 Tbsp of hot sauce until well combined. Drizzle this sauce over the hot, baked cheesy potato dip. The combination of soft potatoes, gooey cheese, and the tangy sauce is absolutely divine! Enjoy every spoonful.
