This weekend, I decided to whip up a special snack for the kids instead of a side dish. It’s a fantastic combination of chewy rice cakes and savory bacon! Today, we’ll be making bacon-wrapped rice cakes even easier and quicker using an air fryer. While pan-frying is also delicious, the air fryer ensures a crispier and more evenly cooked result. Cooking Instructions
Step 1
Prepare your tteokbokki rice cakes, ensuring they are soft. Cut the bacon slices in half. Wrap each rice cake tightly with a piece of bacon. For an extra flavor kick, you can add a thin slice of scallion inside the bacon before wrapping. (Note: Scallions might char slightly in the air fryer, so keep this in mind!)
Step 2
Another method is to cut the rice cakes in half, tuck them inside the bacon wrap, and then secure the bacon with a toothpick to prevent it from unraveling. This is a simple way to ensure everything stays together.
Step 3
Continue wrapping all the rice cakes with bacon to create your bacon-wrapped delights. Now they are ready to be cooked to perfection! You can pan-fry them until golden brown or use your air fryer for a more convenient cooking experience.
Step 4
Place the bacon-wrapped rice cakes in the air fryer and cook at 180°C (350°F) for 10 minutes. Flip them over and cook for an additional 5 minutes. This will make the bacon nice and crispy while keeping the rice cakes delightfully chewy. (Cooking time may vary depending on your air fryer’s performance. I found that one round might be sufficient, though I cooked mine twice.)
Step 5
Finally, top the cooked bacon-wrapped rice cakes with slices of cheddar cheese. Microwave for about 20 seconds, just until the cheese is melted and gooey. This adds an extra layer of delicious, cheesy flavor to your snack.
