Main Ingredients
  • 1 medium zucchini
  • 2 stalks scallions

Seasoning Ingredients
  • 1 pinch of salt (about 1/4 tsp)
  • 1 Tbsp soy sauce
  • 1 Tbsp tangerine syrup (or sugar)
  • 1/2 Tbsp rice syrup (or corn syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, wash the zucchini thoroughly. Then, slice it into half-moon shapes about 0.5 cm thick. These bite-sized pieces are also great for kids.

Step 2

Heat a pan over medium heat and add about 1 Tbsp of cooking oil. Add half of the sliced zucchini and stir-fry evenly until the surface looks slightly translucent. It’s best to stir-fry in batches to prevent the zucchini from becoming too watery and mushy.

Step 3

Remove the first batch of stir-fried zucchini to a separate plate for now. This helps maintain the zucchini’s texture, preventing it from getting too soft.

Step 4

Add the reserved zucchini back to the pan. Then, add the remaining zucchini, lightly drizzle with a little more cooking oil, and stir-fry evenly over medium heat. The key is to cook until all the zucchini pieces are tender.

Step 5

Now it’s time to add the seasonings. When the zucchini is almost cooked, add a pinch of salt, 1 Tbsp soy sauce, 1 Tbsp tangerine syrup (or sugar), and 1/2 Tbsp rice syrup (or corn syrup). Stir well to combine and continue to stir-fry. Finely chop the scallions and add them in to enhance the flavor.

Step 6

Once all ingredients are well combined with the seasoning, turn off the heat. Finally, drizzle in 1 Tbsp of sesame oil and sprinkle 1 Tbsp of toasted sesame seeds for a nutty aroma and finish.

Step 7

Your delicious stir-fried zucchini is ready! Serve it over a bowl of warm rice for a fantastic side dish. Store any leftovers in an airtight container in the refrigerator.
