Main Ingredients

  • 1 medium zucchini
  • 1 medium onion
  • A small amount of green onion (chopped)
  • 1/2 cup water (approx. 100ml)

Seasonings

  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp minced garlic
  • 1 Tbsp saeujeot (fermented salted shrimp, including brine)
  • 1 Tbsp mirin (or cooking wine)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp perilla oil (deulgireum)
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Before you begin, wash and prepare the zucchini and onion. A tip for selecting fresh zucchini is to choose one with a smooth, firm surface and a consistent color all over.

Trim the ends off the zucchini and slice it into 0.5cm thick half-moons. If sliced too thinly, they might fall apart during cooking. Peel the onion, quarter it, and then slice it thinly. Thinly sliced onions absorb flavors better.

Chop the green onion finely, focusing on the thicker parts. The aroma of the green onion will enhance the dish’s flavor.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. First, add the sliced onions and zucchini and stir-fry until they become slightly translucent. Then, add 1 tablespoon each of gochugaru, minced garlic, saeujeot (including the brine), mirin, and plum extract. Stir-fry to coat the vegetables evenly with the seasonings. Saeujeot adds a wonderful umami depth, so don’t skip it!

Once the seasonings and vegetables are mixed, pour in 1/2 cup (100ml) of water and add the chopped green onion. Mix everything well, then cover the pan and simmer over medium-low heat for about 5-7 minutes, or until the zucchini is tender. Stir occasionally to prevent sticking.

When the zucchini is cooked to your liking and the sauce has slightly reduced, drizzle 1 tablespoon of perilla oil around the edges of the pan to release its aroma. The nutty fragrance of perilla oil will elevate the flavor of your stir-fried zucchini and onion.
