Key Ingredients- 300g thinly sliced pork belly (daepae samgyeopsal)
- 1 bunch fresh chives
- 5-6 cloves garlic, minced
Cooking Instructions
Step 1
First, mince the 5-6 cloves of garlic. Wash about a handful of chives thoroughly and cut them into roughly 5cm lengths. Avoid cutting them too finely, as they can become mushy when cooked.
Step 2
In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp sugar, and 1.5 Tbsp vinegar. Stir well until the sugar is completely dissolved to create the sauce. The precise ratio of these ingredients is key to the flavor.

Heat a pan over medium heat. Add about 300g of thinly sliced pork belly and spread it out in a single layer. Since it’s thin, it cooks quickly. Season with a pinch of salt and pepper if desired.

Once the pork belly is partially cooked, add the prepared sauce and 1 tsp of fish sauce. If you don’t have fish sauce, you can add a tiny amount of Korean anchovy or sand lance sauce for added umami. Be cautious with the amount of anchovy/sand lance sauce, as too much can impart a fishy taste.

Stir-fry the pork belly with the sauce until well combined. The pork belly may release a lot of fat during cooking; if it seems excessive, you can carefully drain some of it. Now, add the minced garlic and stir-fry for about 1 minute until fragrant, being careful not to burn the garlic.

Create a small space in the center of the pan, pour in the sauce, and let it bubble briefly. Then, quickly toss it with the pork belly. This step helps the sauce to adhere better to the meat and develop a deeper flavor.

Finally, add the cut chives to the pan. Stir-fry them quickly, just until they begin to wilt, about 30 seconds to 1 minute. Overcooking will diminish their crispness and fresh flavor, so keep it brief.
