Let’s make a delicious Japchae-bap today. It’s a satisfying meal, perfect for any time!
Main Ingredients- Japchae noodles (glass noodles) for 4 servings
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/3 bunch spinach
- 1 onion
- 50g meat (beef or pork, optional)

Step 1
Let’s make a hearty and satisfying Japchae-bap, a family favorite, easily and deliciously at home! It’s especially convenient if you have leftover Japchae.
Step 2
First, wash all the vegetables thoroughly under running water. Remove the seeds from the red and yellow bell peppers and slice them thinly into strips. Slice the onion similarly. Trim the roots of the spinach, wash it clean, and squeeze out any excess water. Soak the japchae noodles in lukewarm water for 15-20 minutes before cooking to soften them, which will reduce cooking time.
Step 3
Heat a little cooking oil in a pan and stir-fry the meat until it’s browned. Once the meat is cooked, add the sliced onion and bell peppers. Stir-fry over high heat until the vegetables are slightly softened. Be careful not to overcook, or they will lose their crispness.
Step 4
In a separate pan, heat a little cooking oil and add the pre-soaked japchae noodles. Stir-fry until the noodles loosen up. Then, add 1/2 cup soy sauce, 1 Tbsp sugar, and a pinch of black pepper. Continue to stir-fry until the noodles are well-coated with the sauce. Since the vegetables are not seasoned separately, it’s okay if the noodle sauce tastes a bit salty at this stage. You can use regular soy sauce or dark soy sauce.
Step 5
Add the stir-fried vegetables and meat to the sauced japchae noodles. Mix everything together and gently stir-fry until the ingredients are well combined. Use a spatula to gently separate the noodles as you stir-fry to prevent them from clumping.
Step 6
Finally, add the finishing seasonings. Stir in 1 Tbsp sesame oil and 1 Tbsp oyster sauce, and stir-fry briefly. Oyster sauce adds a great umami depth, enhancing the flavor of the japchae-bap. Taste and add a little more soy sauce if needed.
Step 7
Serve the finished japchae generously over a bowl of warm rice. This creates a visually appealing and incredibly tasty Japchae-bap! Sprinkle with sesame seeds for an extra nutty flavor, if desired. Enjoy your meal!
