- Minced garlic 1 Tbsp (freshly minced garlic provides a better fragrance)
- Gochugaru (Korean chili powder) 2 Tbsp (adjust spiciness to your preference)
- Soy sauce 1 Tbsp (enhances savory flavor)
- Fish sauce 1/2 Tbsp (use for a deeper flavor)
- Oyster sauce 1/2 Tbsp (boosts flavor and umami!)
- Cooking wine 1 Tbsp (removes gamey odors and adds shine)

Cooking Instructions
Step 1
First, wash the 300g of soybean sprouts thoroughly under running water. It’s important to rinse them gently to avoid breaking off the heads or tails, and drain them completely. Rinse well to prevent a raw bean smell.

Cut the 2 square fish cakes into bite-sized pieces. For best results, fold them in half, then cut into 3-4 strips, and finally slice into thin strips about 0.5cm wide. This helps the seasoning penetrate better.

Peel, wash, and finely julienne the 1/3 carrot, similar in thickness to the fish cakes. Carrots add a beautiful color and a refreshing crunch.

Finely chop the 1/2 green onion. It’s best to use the white and light green parts rather than the dark green leaves, as they are less pungent and add more flavor to the dish.

Take a wide pan and drizzle 1 Tbsp of sesame oil into it before heating. Adding sesame oil beforehand helps prevent ingredients from burning and infuses a subtle aroma.

Once the pan is lightly heated, arrange the drained soybean sprouts attractively. As the sprouts release moisture while cooking, it’s best to start with high heat.

Add the seasoning ingredients directly on top of the soybean sprouts. Add 1 Tbsp minced garlic, 2 Tbsp gochugaru, 1 Tbsp soy sauce, 1/2 Tbsp fish sauce, 1/2 Tbsp oyster sauce, and 1 Tbsp cooking wine in order.

On top of the sprouts and seasonings in the pan, arrange the julienned fish cakes and carrots. Layering the ingredients this way helps them cook evenly.

Now, cover the pan with a lid and steam over high heat for about 3 minutes. During this time, the soybean sprouts will soften, the fish cakes and carrots will cook to a suitable texture, and the seasonings will begin to soak in.

After 3 minutes, lift the lid. You’ll see that the soybean sprouts have wilted, and the carrots are still crisp-tender. If there’s too much liquid, you can let it reduce slightly.

Using a spatula or two chopsticks, gently stir and toss the soybean sprouts, seasonings, fish cakes, and carrots to ensure they are well combined and not clumped together. The key is to stir gently.

Once the seasonings are evenly distributed and the ingredients look nicely colored, add the chopped green onion and a pinch of MSG (optional). Toss gently again. The fragrant green onion enhances the flavor.
