  • 2 eggs
  • Sliced ham (to taste)
  • Sliced cheese (to taste)

Cooking Instructions

Step 1

First, finely chop the ham, cheese, and vegetables (carrot, green onion) that will go inside the egg muffins. If you have time, lightly sautéing the chopped vegetables in a pan beforehand will enhance the flavor. However, it’s perfectly fine to skip this step if you’re in a hurry or want a simpler preparation!

Step 2

Trim the crusts off the bread slices. Using a rolling pin, flatten each slice of bread as thinly and evenly as possible. Carefully press the flattened bread into a muffin tin, ensuring it lines the cup well. If you don’t have a muffin tin, you can use oven-safe ramekins or cups.

Step 3

Fill the bread-lined cups with the chopped ham and vegetables. It’s a good idea to leave a little space at the top, rather than overfilling.

Step 4

Now, gently crack the eggs. Be careful not to break the yolks, and place one egg into each bread cup on top of the other ingredients. Sprinkle the finely chopped green onions over the egg and add a tiny pinch of salt to enhance the flavor.

Step 5

Preheat your convection oven to 180°C (350°F) and bake the egg muffins for about 10 minutes. The goal is to have a soft-boiled yolk. If you prefer a fully cooked yolk, extend the baking time slightly. If using an air fryer, bake at 160-170°C (320-340°F) for 8-10 minutes.

Step 6

Finally, sprinkle parsley flakes over the finished egg muffins for a beautiful presentation and added aroma. If you gently scoop away some of the cooked egg white, you’ll reveal a stunning, runny yolk that looks like a jewel – a truly delightful sight!
