This recipe introduces an easy way to make whole roasted chicken using an air fryer. Achieve a perfectly crispy skin and incredibly juicy, tender meat right in your own kitchen. The aromatic herbs and spices create a rich flavor profile, and by roasting vegetables alongside the chicken, you can enjoy a complete and satisfying meal.
Whole Chicken Ingredients- 1 whole chicken (approx. 850g)
- 1 cup milk (for removing chicken odor)
- 1/2 Tbsp coarse salt
- 1 Tbsp herb salt
- 1 tsp dried oregano
- 1 tsp curry powder
- 1 tsp paprika powder
- Pinch of black pepper
- 2 Tbsp olive oil
- 4-5 cloves garlic (or 1 Tbsp minced garlic)
Side Vegetables- 1 potato (cut into large chunks)
- 1/2 carrot (cut into large chunks)
- 5-6 garlic scapes (cut into bite-sized pieces)
- 1/2 onion (cut into large chunks)
- 1/2 head broccoli (cut into florets)
- Pinch of herb salt
- Pinch of black pepper
- 1 Tbsp olive oil
- 1 knob of butter (optional, for enhanced flavor)
- 1 potato (cut into large chunks)
- 1/2 carrot (cut into large chunks)
- 5-6 garlic scapes (cut into bite-sized pieces)
- 1/2 onion (cut into large chunks)
- 1/2 head broccoli (cut into florets)
- Pinch of herb salt
- Pinch of black pepper
- 1 Tbsp olive oil
- 1 knob of butter (optional, for enhanced flavor)
Cooking Instructions
Step 1
First, rinse the chicken thoroughly under running water. Carefully trim away any excess fat or impurities from the skin and cavity for a cleaner result.
Step 2
Place the chicken in a bowl and pour enough milk to cover it completely. Let it soak for at least 30 minutes. Milk is effective in removing any gamey odor and blood from the chicken. If you don’t have milk, you can use about 1/2 cup of cooking wine or soju as an alternative.
Step 3
Remove the chicken from the milk and rinse it under cold water several times until all milk residue is gone. Pat it completely dry. Now it’s time to season. Sprinkle coarse salt, black pepper, herb salt, oregano, curry powder, and paprika powder evenly over the chicken, both inside and out. Rub the seasonings into the meat. If you don’t have dried herbs, you can use a bit more pepper and add curry powder for a fantastic flavor boost.
Step 4
Stuff the cavity of the chicken with whole garlic cloves. If you don’t have whole garlic, 1 tablespoon of minced garlic can be placed inside. It’s okay to omit the garlic if you prefer.
Step 5
Place the seasoned chicken in a clean plastic bag or an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld. For an even richer taste, you can marinate it for 2-3 hours or even overnight.
Step 6
Place the chicken in your air fryer basket. Air fry at 230°C (450°F) for 15 minutes. Then, flip the chicken and continue air frying at 210°C (410°F) for another 15 minutes. This initial cooking helps to crisp the skin and start cooking the interior.
Step 7
Keep in mind that air fryer models vary in power, and chicken sizes differ. Adjust the temperature and cooking time accordingly. It’s a good idea to check the chicken’s doneness periodically and adjust as needed.
Step 8
While the chicken is cooking on its second side, prepare your side vegetables. Cut potatoes, carrots, garlic scapes, onions, and broccoli into desired sizes. Toss them with 1 tablespoon of olive oil, a pinch of herb salt, and pepper. Add these seasoned vegetables to the air fryer alongside the chicken.
Step 9
For an extra touch of deliciousness, place a small knob of butter on top of the vegetables. The butter will melt and add a wonderful richness and flavor.
Step 10
Once the vegetables are golden and tender, remove them first and set them aside on a plate. If you’re concerned about the chicken not being fully cooked, place it back into the air fryer alone at 200°C (400°F) for an additional 5 minutes per side. This ensures it’s cooked through and the skin is extra crispy. Carve the roasted chicken and serve hot with the prepared vegetables.
