  • 80g shredded mozzarella cheese
  • 30g carrot
  • 30g broccoli
  • 5 black olives
  • A little Gochujang sauce (spicy red pepper paste dip)
  • 1/2 cup soju (or white wine)

Begin by preparing all your ingredients. Having everything prepped before you start cooking makes the entire process much smoother and more enjoyable.

Thinly slice the black olives into rings, preserving their shape. Finely dice the carrot and broccoli. Ensuring the vegetables are finely chopped will help them distribute evenly over the scallops.

To clean the scallops, place them in a bowl of saltwater (dissolve about 1 tablespoon of salt in water) and let them purge for 1 to 2 hours. This process helps remove any grit or sand from inside the shells.

After purging, scrub the scallops thoroughly with a brush under running water to remove any dirt from the shells. In a pot of boiling water, add half a cup of soju (or white wine). Add the cleaned scallops and cook just until their shells begin to open. Immediately turn off the heat to prevent the scallops from becoming tough.

Carefully remove one half of each scallop shell. Lightly brush a small amount of Gochujang sauce onto each scallop. Then, evenly sprinkle the finely diced carrot and broccoli over the scallops.

Next, generously top each scallop with shredded mozzarella cheese. Arrange the thinly sliced black olive rings attractively on top of the cheese.
