First, wash the chestnuts thoroughly. Place them in a bowl and cover with cold water. Let them soak for 1 hour. Soaking the chestnuts makes the shells much softer and easier to remove later.

Bring water to a boil in a steamer. Once the steam is rising strongly, arrange the soaked chestnuts in the steamer basket. Cover and steam over high heat for 20 minutes. This steaming process will moisten the chestnuts and make the shells and inner skins easier to separate.

After steaming for 20 minutes, turn off the heat but keep the lid on. Let the chestnuts steam for an additional 10 minutes. This resting period is crucial! Allowing them to rest helps the heat distribute evenly inside the chestnuts, making the shells detach even more easily.

It’s important not to open the lid at all during these 10 minutes of resting. This ensures the moisture stays within the chestnuts, cooking them thoroughly from the inside out.

Once the resting period is complete, immediately transfer the hot, steamed chestnuts into a bowl of cold water. Let them cool down completely. Cooling the hot chestnuts in cold water causes the shell and the kernel to separate further, making peeling a breeze.
