While many recipes utilize smoked duck, fresh duck meat is often only prepared as ‘Jumulleok’ (a stir-fried dish). To explore more diverse ways to enjoy fresh duck, I’ve adapted the popular Tteokgalbi (grilled short rib patties) and hamburger recipes to include duck. This recipe offers tender textures and rich juices, making it a delightful meal for both children and adults. Enjoy a special meal with these delectable duck tteokgalbi and hearty duck burgers!

Duck Tteokgalbi Ingredients

  • 500g fresh duck meat
  • 270g ground beef
  • 1 white part of green onion
  • 3 Tbsp Cheongju (rice wine)
  • 7 Tbsp soy sauce
  • 3 Tbsp sugar
  • 2 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 3 Tbsp starch powder
  • Plenty of black pepper

Duck Burger Ingredients

  • 1 hamburger bun
  • 1 handful of Korean chives (chamnamul)
  • A little onion
  • 2 slices of tomato
  • 1 slice of cheese
  • Mayonnaise (to taste)
  • Ketchup (to taste)

Cooking Instructions

Step 1

First, prepare the ingredients for 8 servings of delicious duck tteokgalbi. The key is the golden ratio of fresh duck meat and tender ground beef.

For enhanced flavor in the tteokgalbi mixture, use the white part of the green onion. Trim off the root ends and mince it as finely as possible. Finely chopped green onion helps remove any gamey odor from the meat and adds a pleasant aroma.

Using paper towels, thoroughly pat the fresh duck meat to remove any excess blood. Removing blood is crucial for a clean flavor without any off-putting smells.

Finely mince the blood-removed duck meat with a knife. Mincing it into uniformly sized pieces will help the seasoning penetrate evenly and result in a tender texture. (You can also use a food processor!)

In a large bowl, combine 500g of the finely minced duck meat and 270g of ground beef. Add the minced green onion from step 2, 2 Tbsp minced garlic, 3 Tbsp Cheongju, 7 Tbsp soy sauce, 3 Tbsp sugar, 2 Tbsp sesame oil, 3 Tbsp starch powder, and a generous amount of black pepper. Mix everything thoroughly until well combined.

Knead the mixture vigorously until it becomes sticky and well-combined. Kneading by hand for over 10 minutes will make the ingredients bind together, making it much easier to form the tteokgalbi patties and ensuring a softer texture when cooked.

Divide the sticky meat mixture into 8 portions, about 100g each. Shape them into round, flattened tteokgalbi patties. Making them not too thick will ensure they cook evenly all the way through.

You should have 8 patties from the round meat mixture. Now, let’s cook these delicious duck tteokgalbi!

Heat a lightly oiled pan over low heat and place the tteokgalbi patties on it. Cook slowly until the inside is thoroughly cooked. The duck skin will release its own fat, making the patties moist and flavorful without needing extra oil. Be careful to manage the heat to prevent burning.

Cook each side for about 8-10 minutes, for a total of 16-20 minutes. It’s important to cook patiently to ensure the outside is golden brown and the inside is perfectly cooked and juicy.

Once the duck tteokgalbi is well-cooked, arrange them nicely on a plate or in a cast-iron skillet. Your delicious duck tteokgalbi is ready! It serves as a fantastic main dish on its own.

Spread mayonnaise and ketchup generously on the inside of the hamburger bun halves, according to your preference. These sauces will add moisture and flavor to the bun.

On one side of the bun, pile on a good amount of fresh Korean chives, then artfully arrange thin slices of onion and tomato. You can substitute Korean chives with lettuce, iceberg lettuce, romaine, or any other leafy greens you have on hand. Fresh vegetables add a wonderful texture to the burger.

Place the well-cooked duck tteokgalbi patty on top of the vegetables, followed by a slice of cheese. Turn off the heat, cover the pan with a lid for a moment, allowing the cheese to melt slightly over the patty. The melting cheese will help bind the patty and vegetables together.
