  • Cooking : Stir-fry
  • Servings : 4 servings
  • Cooking Time : Within 60 minutes

Fajita Ingredients

  • 600g sliced duck breast or thigh meat, for fajitas (slice it to a moderate thickness)
  • 8-10 Tortillas (choose size according to preference)
  • ½ Red Bell Pepper (sliced into thin strips)
  • ½ Yellow Bell Pepper (slice into thin strips, similar to red bell pepper)
  • 1 Onion (sliced thinly)
  • Olive oil (for sautéing)
  • Salt (to taste)
  • Black pepper (to taste, for seasoning the duck)

Fresh Guacamole Ingredients

  • 1-2 Ripe Avocados (should be soft enough to mash easily)
  • ½ Bell Pepper (finely diced, similar size to avocado pieces)
  • 1 Tomato (seeds removed and finely diced)
  • ½ Onion (very finely minced)
  • Juice of ¼ Lemon (for freshness and to prevent browning)
  • 1 Tbsp Olive oil (for added flavor)
  • Salt (to taste)
  • Black pepper (a pinch, for enhanced flavor)
  • Fresh Basil leaves (chopped, for aroma)
  • Fresh Parsley (chopped, for color and freshness)
  • Cooked Shrimp (optional, e.g., cocktail shrimp)
  • Cheese (optional, e.g., Cheddar, Mozzarella, according to preference)

Cooking Instructions

Step 1

Slice the duck meat into bite-sized pieces, ensuring they have a moderate thickness. Place them in a bowl, add a generous amount of olive oil, salt, and black pepper, and mix well to season. Marinate in the refrigerator for at least 30 minutes to allow the flavors to deepen.

Step 1

Step 2

Finely dice the bell peppers, tomato, and onion for the guacamole. For the tomato, removing the seeds will help reduce excess moisture. In a separate bowl, mash the ripe avocados until smooth using a fork or a potato masher. Add the diced vegetables, lemon juice, olive oil, salt, pepper, chopped basil, and parsley to the mashed avocado. Mix everything together thoroughly. Taste and adjust seasoning as needed. If you wish to add shrimp or cheese, mix them in at this stage.

Step 2

Step 3

Thinly slice the red bell pepper, yellow bell pepper, and onion for the fajitas. Heat a little olive oil in a pan over medium heat. Add the sliced vegetables and sauté until they are slightly softened but still retain a bit of crispness. Avoid overcooking them, as they should maintain a pleasant crunch.

Step 3

Step 4

Now, let’s prepare the tortillas. You can steam them for about 5 minutes in a steamer or microwave them for 30 seconds to 1 minute until warm and pliable. For a slightly crispier texture, lightly toast them in a dry skillet for 10-20 seconds per side.

Step 4

Step 5

It’s time to cook the duck. Heat a grill pan or a regular skillet over medium-high heat. Place the marinated duck slices in the hot pan and cook for about 15 minutes, turning occasionally, until golden brown on the outside and cooked through.

Step 5

Step 6

Once the duck is cooked, let it rest for a moment. Then, cut the duck slices into 2-3 or 3-4 pieces each, depending on the tortilla size, making them easier to wrap.

Step 6

Step 7

Arrange the sautéed vegetables attractively on a serving plate or skillet. Their vibrant colors will make the dish visually appealing.

Step 7

Step 8

Carefully drain any excess oil from the cooked duck, then place it next to the sautéed vegetables on the serving platter. This completes the appetizing presentation.

Step 8

Step 9

Finally, place the freshly made guacamole alongside the fajita components. Serve with a selection of your favorite sauces such as salsa, sour cream, or chili sauce to complete your bountiful Mexican spread. Warm a tortilla, fill it with duck, vegetables, and guacamole to your liking, wrap it up, and savor this delicious meal!
