How to Make Creamy Cheesy Rosé Risotto at Home
Inspired by the delightful combination of rosé tteokbokki and rice, we’ve created a decadent rosé risotto! This recipe infuses the classic rosé sauce with generous amounts of cheese, doubling its savory richness and creating an incredibly satisfying dish. Perfect for a special meal or a comforting weeknight dinner.
Ingredients
- Rosé spaghetti sauce 1 bottle (store-bought)
- 1 onion (medium-sized)
- 1/4 leek
- Cheese of your choice (e.g., mozzarella or cheddar)
- 1/2 small can of corn kernels
- 1 Tbsp minced garlic
- 1 small can of luncheon meat (e.g., Spam)
- 2.5 cups cooked rice (approx. 400g)
- 100ml heavy cream or milk
Cooking Instructions
Step 1
First, prepare all the ingredients for your delicious cheesy rosé risotto. Finely slice the onion and cut the luncheon meat into bite-sized pieces, about 1cm thick. Chop the leek and set aside.
Step 2
Pour the store-bought rosé spaghetti sauce into a wide pan and begin to heat it over medium heat. While the sauce is coming to a simmer, you can start slicing the onion and meat to save time.
Step 3
Once the sauce starts to gently bubble, add the sliced onion, luncheon meat, and minced garlic. Cook together until the ingredients are tender. Be mindful not to let the heat get too high.

When the onion and meat have softened slightly, reduce the heat to low. Slowly pour in the heavy cream or milk (100ml) and stir well with the sauce. This step will create a smoother, creamier rosé sauce.

Now, add the drained corn kernels and chopped leek to the pan. Next, add the 2.5 cups of warm cooked rice. Stir everything together thoroughly, ensuring the sauce evenly coats the rice grains.

Using a spatula or spoon, stir and cook the risotto until the rice and sauce are well combined. The key is to let the rice absorb the sauce, achieving a moist and tender risotto texture.

If you desire a touch of spice, you can add a little chili sauce at this stage to introduce a pleasant kick. Adjust the amount according to your preference.
Step 8
Finally, generously sprinkle your chosen cheese (mozzarella or cheddar) over the top of the risotto. Cover the pan with a lid and let it cook on low heat for 1-2 minutes, or until the cheese is beautifully melted. Your rich and creamy cheesy rosé risotto is now complete!
