  • A little Radish from White Kimchi (finely chopped)
  • 120ml Water Kimchi Brine
  • 60ml Store-bought Naengmyeon Broth
  • 40ml Hongcho (Pomegranate Vinegar, etc.)

First, prepare the radish that might be left over from making white kimchi or water kimchi. This radish adds texture and a refreshing bite to the dongchimi ade. Wash it thoroughly and chop it into small cubes or thin strips, about 0.5cm in size.

Measure and prepare 120ml of water kimchi brine, which will form the base of your refreshing dongchimi ade. You can use store-bought brine or the brine from homemade water kimchi. The flavor of the ade will depend on the brine’s taste, so choose one that is already slightly seasoned.

Next, measure and prepare 60ml of store-bought naengmyeon broth. Naengmyeon broth adds umami and depth to the dongchimi ade, doubling its refreshing quality. Make sure the broth is well-chilled.

Prepare 40ml of Hongcho (such as pomegranate vinegar) to add a tangy flavor. Hongcho provides a sweet and sour profile to the ade, as well as a beautiful color. You can adjust the amount to your preference, but it’s recommended to start with 20ml as per the recipe and then adjust.

Now it’s time to create the core base of your ade! Combine 120ml of water kimchi brine, 60ml of store-bought naengmyeon broth, and 40ml of Hongcho in a large glass or pitcher. Mix them well. This ratio (2:1:0.67, approximately) creates a total of about 220ml of ade base, offering a perfect balance of tanginess, sweetness, and coolness. Taste and adjust with more Hongcho or water kimchi brine if needed.

Get your serving glass or cup ready. First, arrange the chopped dongchimi radish prepared in step 1 at the bottom of the glass. The crunchy radish will add a delightful textural element.
