Main Ingredients

  • 1 bunch of Dollae (Korean wild chives), cleaned and trimmed

Seasoning Ingredients

  • 5 Tbsp Soy Sauce
  • 2 Tbsp Perilla Oil (for nutty aroma)
  • 2 Tbsp Gochugaru (Korean chili flakes, adjust to your spice preference)
  • 1 Tbsp Oligodang (corn syrup, or sugar)
  • 1 Tbsp Maesil Extract (plum extract, for sweetness and tang)
  • Sesame seeds, for garnish

Cooking Instructions

Step 1

First, prepare the fresh Dollae. Rinse them thoroughly under running water to remove any dirt or debris. Gently shake off excess water. Then, chop the Dollae into bite-sized pieces, about 2-3 cm long. Cutting them into smaller pieces will help the sauce to adhere better and make them easier to eat.

Transfer the cleaned and chopped Dollae to a large mixing bowl. Add all the seasoning ingredients: soy sauce, perilla oil, gochugaru, oligodang, and maesil extract. Set aside the sesame seeds for garnish.

Now, gently mix everything together until the Dollae are evenly coated with the seasoning. Be careful not to overmix, as this can make the Dollae mushy. The key is to gently toss them with your hands. Finally, sprinkle generously with sesame seeds for a visually appealing and flavorful finish. Your delicious Dollaejang sauce is ready!
