Main Ingredients- Spaghetti pasta, 1 serving
- Peeled jumbo shrimp, 8 pieces
- Shiitake mushrooms, 2
- Garlic cloves, 4
- Cheongyang chili pepper (or bird’s eye chili), 1
Sauce & Seasoning- Olive oil, 5 Tbsp
- Salt, to taste

Cooking Instructions
Step 1
Boil the spaghetti pasta in plenty of salted water for about 6 minutes, which is 1-2 minutes less than the package instructions. This ensures the pasta will be al dente. Before draining, reserve about one cup of the starchy pasta water; it’s perfect for adjusting the sauce consistency later.
Step 2
Heat a generous amount of olive oil in a pan over medium-low heat. Add thinly sliced garlic and chopped Cheongyang chili peppers. Gently sauté them to infuse the oil with their aroma. Be careful not to burn the garlic; cook until fragrant and slightly softened. This infused oil forms the flavor base for your spaghetti.
Step 3
Add the peeled jumbo shrimp and sliced shiitake mushrooms to the pan with the fragrant garlic and chili oil. Sauté until the shrimp turn pink and opaque and the mushrooms are slightly tender. Avoid overcooking the shrimp, as they can become tough.
Step 4
Once the shrimp are cooked, add the reserved pasta water and the drained spaghetti to the pan. Stir in 1 tablespoon of chicken stock. Season with salt and pepper to your liking. Toss everything together quickly to coat the pasta evenly with the sauce.
Step 5
In a separate pan or the same one after wiping it clean, repeat the process: heat olive oil, sauté garlic and chili peppers, then add shrimp and mushrooms and cook. Once cooked, stir in 1/2 tablespoon of Tom Yum paste (or Cajun sauce) and mix well to create a flavorful dipping sauce.
Step 6
Serve the main spaghetti dish onto a plate. Pour the specially prepared dipping sauce into a small bowl or ramekin. To enjoy, dip the spaghetti noodles into this flavorful sauce with each bite, offering a delightful twist on traditional seafood spaghetti.
