I’ve made a delicious cabbage and egg pancake by finely chopping cabbage, eggs, and shrimp. This dish is not only tasty but also great for your diet, allowing you to enjoy cabbage while staying healthy.

Ingredients

  • 3 large eggs
  • 1 handful cabbage (approx. 100g)
  • 5 frozen shrimp
  • 2 slices processed cheese
  • 50g carrot
  • Pinch of black pepper
  • Pinch of parsley flakes

Cooking Instructions

Let’s start by preparing the vegetables and shrimp. Finely mince the carrot and frozen shrimp after rinsing them lightly under cold water and patting them dry. Mincing them finely ensures a tender texture in the finished pancake. Wash the cabbage thoroughly, pat it dry, and shred it thinly.

In a bowl, crack the 3 large eggs. Add a pinch of finely ground black pepper. Whisk the eggs gently with a fork or whisk to break up the yolks and whites. Add the minced carrot, minced shrimp, and shredded cabbage to the bowl. Mix everything together with a spoon until the ingredients are evenly coated with the egg mixture. Ensuring all components are well combined is key.

Heat a non-stick pan over medium-low heat. Once the pan is warm, pour in the batter and spread it thinly. Cook until golden brown on both sides. Be careful not to use high heat, as this can burn the outside before the inside is cooked. Gentle, even heat is best. When the edges start to turn golden, carefully flip the pancake and cook the other side until golden brown. Cooking it gently will bring out the natural sweetness of the cabbage.

Once the cabbage pancake is cooked, place 2 slices of processed cheese on top. If you plan to eat it immediately, cook for another minute or so until the cheese is melted and gooey, enhancing the flavor. If you’re saving it for later, you can melt the cheese by microwaving the pancake for about 1 minute after it’s cooled slightly. Finally, sprinkle a pinch of parsley flakes on top for a touch of color and freshness.
