Cake Ingredients
  • 12 fresh strawberries
  • 4 eggs
  • 60g sugar
  • 150g cake flour (or all-purpose flour)
  • 1/2 cup milk or water (approx. 120ml)
  • 2 Tbsp vegetable oil

Cream and Garnish Ingredients
  • 100g cold heavy whipping cream
  • 50g sugar (for whipping cream)
  • 5 Tbsp strawberry jam

Cooking Instructions

Step 1

First, let’s prepare the crepe batter. In a bowl, whisk together 4 eggs and 60g of sugar until well combined and the sugar is mostly dissolved. Sift in 150g of cake flour and gently mix until just combined, ensuring no lumps remain. Finally, add 1/2 cup of milk (or water) and 2 Tbsp of vegetable oil. Whisk everything together until you have a smooth, pourable batter, similar in consistency to thin cream. Tip: For an even smoother crepe, you can strain the batter through a sieve.

Step 2

Now, let’s cook thin and beautiful crepes! Heat a non-stick frying pan over medium heat. Lightly grease the pan with a little oil or wipe it with a paper towel. Pour about 1/4 cup of batter (or enough to cover the bottom thinly) into the center of the pan and swirl it around to create a thin, even circle. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crepe and cook the other side for about 30 seconds. Repeat this process with the remaining batter to make all your crepes. Tip: Pay close attention to the heat. Medium-low heat is best to prevent burning and ensure even cooking.

Step 3

While the crepes are cooking, let’s prepare the strawberries and whipping cream. Wash the 12 fresh strawberries thoroughly, remove the green tops, and slice them thinly. Thinner slices will make for a prettier cake. In a separate, chilled bowl, whip 100g of cold heavy whipping cream with 50g of sugar until stiff peaks form. Be careful not to over-whip. Tip: Using a cold bowl and whisk will help the cream whip up faster and better.

Step 4

It’s time to assemble the cake! Place one crepe on your serving plate or cake stand. Spread a thin layer of strawberry jam evenly over the crepe. Then, spread a generous layer of whipped cream on top of the jam. Arrange a layer of your thinly sliced strawberries over the cream. Repeat this process – crepe, jam, cream, strawberries – stacking them up layer by layer. Tip: Try to keep the fillings within the edges of the crepes for a neater final presentation.

Step 5

Finally, let’s decorate the top of the cake! Pipe or spread the remaining whipped cream decoratively over the top of the assembled cake. Arrange the fresh strawberries attractively on top for garnish. You can also lightly dust with powdered sugar if desired.
