Main Ingredients- Curry powder or roux 100g (choose your preferred flavor)
- SPAM 1/2 can (approx. 200g)
- 1/2 Onion
- 1/2 Carrot
- 1/2 Green Bell Pepper
- 1/4 Yellow Bell Pepper
- 1/4 Red Bell Pepper
Seasoning & Liquid- 1/2 tsp Salt (for adjusting taste)
- 1 Tbsp Olive Oil
- 2 Cups Milk (approx. 400ml)
- 4 Cups Water (approx. 800ml)
- 1/2 tsp Salt (for adjusting taste)
- 1 Tbsp Olive Oil
- 2 Cups Milk (approx. 400ml)
- 4 Cups Water (approx. 800ml)
Cooking Instructions
Step 1
Prepare all ingredients by washing and peeling as needed. Dice everything into bite-sized cubes, about 1.5cm. Ensure the carrots and onions are cut slightly thicker to prevent them from becoming mushy during cooking.
Step 2
If using curry powder, take 2 cups of the total 4 cups of water and whisk the curry powder until smooth and lump-free. If using curry roux blocks, you will dissolve them directly in the boiling liquid.
Step 3
In a deep pot, heat 1 Tbsp of olive oil over medium heat. Add the diced carrots (which are harder) and sauté them briefly. Once they start to soften slightly, add 2 cups of water and bring to a boil. (If you have potatoes, add them at this stage to cook along with the carrots.)
Step 4
When the carrots are partially cooked, pour in 2 cups of milk and stir well. Then, add the diced SPAM, onion, green bell pepper, and both colored bell peppers. Bring the mixture back to a boil.
Step 5
Once the vegetables are tender and the mixture is boiling, add the dissolved curry mixture or the curry roux blocks. Stir continuously with a spatula over medium-high heat to prevent the curry from sticking to the bottom of the pot until it starts to boil.
Step 6
As soon as the curry begins to boil, reduce the heat to low. Continue to stir gently for about 5 minutes. This simmering step is crucial for thickening the curry to your desired consistency and preventing it from burning. Constant stirring is key here!
Step 7
Once the curry reaches your preferred thickness and is bubbling gently, turn off the heat. Your delicious SPAM curry rice, with its savory SPAM flavor and sweet vegetables, is now ready!
Step 8
Serve this hearty SPAM curry rice generously over warm steamed rice. For an extra treat, enjoy it with crunchy kimchi, kkakdugi, and especially refreshing Dongchimi! The contrast is truly wonderful and will awaken your appetite.
