Pickle Ingredients- 4-5 King Oyster Mushrooms (approx. 300-400g)
- 2 Red Chili Peppers
- 2 Korean Green Chili Peppers (Cheongyang)
- 1/2 Onion
- 4-5 cloves Garlic
Pickle Seasoning Ratio- 1 cup Soy Sauce (200ml)
- 1 cup Water (200ml)
- 1/2 cup Sugar (100g)
- 1 piece Dried Kelp (Kombu, 5x5cm)
- 1/2 cup Vinegar (100ml)
- 1/4 cup Cooking Wine (Mirin or Cheongju) (50ml)
- 1 cup Soy Sauce (200ml)
- 1 cup Water (200ml)
- 1/2 cup Sugar (100g)
- 1 piece Dried Kelp (Kombu, 5x5cm)
- 1/2 cup Vinegar (100ml)
- 1/4 cup Cooking Wine (Mirin or Cheongju) (50ml)
Cooking Instructions
Step 1
First, prepare the vegetables for the pickles. Chop the 1/2 onion into large pieces. Slice the red and green chili peppers into rounds after removing their stems. Thinly slice the 4-5 cloves of garlic. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Wash the fresh king oyster mushrooms thoroughly under running water and trim off the very bottom end. Then, slice them lengthwise into pieces about 0.3cm thick. Slicing them uniformly will make them easier to eat later.
Step 3
Get a heat-resistant glass container or an airtight container. Place the chopped onion, chili peppers, and garlic at the bottom, then layer the sliced king oyster mushrooms on top. Layering the ingredients helps the seasoning penetrate evenly.
Step 4
In a pot, combine 1 cup soy sauce, 1 cup water, 1/2 cup sugar, and 1 piece of dried kelp. Bring this mixture to a boil over medium heat. Stir until the sugar is completely dissolved. Once the edges begin to bubble vigorously, reduce the heat to low and simmer for another 1-2 minutes.
Step 5
As soon as the pickle seasoning mixture starts to boil, turn off the heat immediately. Then, add 1/2 cup vinegar and 1/4 cup cooking wine, and stir well to combine. Adding the vinegar and cooking wine at the end helps preserve their fresh, tangy flavor and aroma.
Step 6
Pour the warm pickle seasoning directly over the mushrooms and vegetables in the container. To ensure all ingredients are fully submerged in the brine, use a plate or a small weight to keep them down.
