Bracken Stir-Fry Seasoning

  • Korean soup soy sauce (Guk-ganjang) 1.5 to 2 Tbsp (adjust based on the saltiness of the bracken)
  • Regular soy sauce (Jin-ganjang) 1.5 Tbsp
  • Minced garlic 1/2 Tbsp
  • Anchovy sauce (Kkanari aekjeot) 2 Tbsp (for added umami)
  • Sesame oil (Deulgireum) 3 Tbsp (for a nutty aroma)
  • Sesame oil (Chamgireum) 1 Tbsp
  • Minced green onion 1/3 stalk equivalent
  • Toasted sesame seeds, a pinch (for a nutty finish)

Cooking Instructions

Start by preparing the bracken. Most commercially available bracken is pre-cleaned, but if you find any tough stems or unsightly parts, trim them and cut the bracken into bite-sized pieces of about 2-3 cm. If you’re using dried bracken, make sure to rehydrate it thoroughly and remove any tough parts.

Prepare the delicious seasoning mix that will make your bracken stir-fry shine. In a bowl, combine the Korean soup soy sauce, regular soy sauce, minced garlic, anchovy sauce, deulgireum (sesame oil), and chamgireum (sesame oil). Mix well. You can adjust the amount of soup soy sauce or anchovy sauce according to your preference.

Blanch the prepared bracken in boiling water. Adding a pinch of salt to the water can help remove any gamey smell and make the bracken more tender. Be careful not to overcook it; blanch for only about 3-5 minutes to keep it from becoming too mushy. (Caution: Over-blanching can result in a soft, mushy texture.)

Immediately rinse the blanched bracken under cold running water to cool it down. After rinsing, soak the bracken in cold water for about 10-15 minutes. This step helps to remove any bitterness and makes the bracken significantly more tender.

Squeeze out excess water from the bracken and place it in a lightly oiled pan over medium heat. Add 3-4 tablespoons of the pre-made seasoning mix and stir-fry until the seasoning is evenly distributed and coats the bracken. It’s important to stir-fry until the bracken is tender and has absorbed the flavors. Taste and add more seasoning if needed, according to your preference.

Once the bracken is well-stirred and cooked, add the minced green onion and stir-fry briefly to release its aroma. Just before turning off the heat, sprinkle with toasted sesame seeds for added nuttiness and to complete the dish.
