I bought this acorn jelly from a local tofu shop, and it’s incredibly delicious – so chewy and smooth, unlike the ones you typically find in supermarkets! It reminded me of the acorn jelly I enjoyed with makgeolli after a hike years ago, so I decided to make a fresh batch with a homemade seasoning and mixed vegetables. This recipe is perfect for a light, refreshing side dish or a snack. Let’s get started!

Main Ingredients

  • 1 pack fresh acorn jelly (for that unique chewy texture!)
  • 1 cucumber
  • 1 bunch of crown daisy (ssukgat)
  • 1 bunch of wild chives (dallae)
  • 2 red chili peppers
  • 2 green chili peppers (cheongyang variety for a bit of heat)

Baek Jong Won’s Golden Seasoning

  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sugar
  • 5 Tbsp soy sauce (jin-ganjang)
  • 1/4 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, let’s prepare the vegetables. Rinse the crown daisy and wild chives thoroughly, pat them dry, and chop them into bite-sized pieces (about 1.5-2 inches long). Slice the cucumber into thin half-moons. Seed the red and green chili peppers and slice them thinly on an angle. This way, the seasoning will coat everything evenly.

Now, let’s cut the star of the dish – the acorn jelly! Slice it into manageable pieces, roughly 1.5 cm thick and 4-5 cm long. Cutting them slightly thicker ensures a better chewy texture and prevents them from breaking apart too easily. A little tip: you can place a cutting board on top of the jelly block while slicing to help keep it from shifting!

Time to make the magic seasoning! In a bowl, combine 1 Tbsp of gochugaru, 1 Tbsp of sugar, 5 Tbsp of soy sauce, 1/4 Tbsp of minced garlic, 2 Tbsp of fragrant sesame oil, and 1 Tbsp of toasted sesame seeds. Whisk everything together until well combined and the sugar is dissolved. This blend is key to the dish’s delicious flavor!

In a larger mixing bowl, add all the prepared vegetables (cucumber, crown daisy, wild chives, and chili peppers). Add half of the seasoning mixture to the bowl. Gently toss the vegetables with your hands or a spatula to coat them evenly. This initial coating helps the vegetables absorb the flavors before adding the jelly.

Finally, add the sliced acorn jelly to the bowl with the seasoned vegetables. Pour the remaining half of the seasoning mixture over everything. Carefully mix everything together, using gentle motions to avoid breaking the jelly. Your delicious acorn jelly salad is now ready! Sprinkle with a few extra sesame seeds for garnish if you like.
