Step 1
First, let’s prepare the delicious dipping sauce! In a bowl, combine 3 Tbsp soy sauce, a desired amount of chopped scallions, 1 tsp minced garlic, 1/2 Tbsp sesame oil, and 1/2 tsp xylose sugar. Mix them well. This sauce will offer a balanced blend of sweetness and umami, enhancing the flavor of your zucchini pancakes.
Step 2
Next, we’ll prepare the zucchini. Wash the zucchini thoroughly under running water. Then, slice it into uniform pieces, about 5mm thick. Slicing them to an even thickness is important – too thin and they might break apart, too thick and they might take too long to cook.

Now, let’s coat the zucchini with flour. Place 2 Tbsp of all-purpose flour or pancake mix into a resealable bag or plastic bag. Add the sliced zucchini and seal the bag. Shake the bag gently to ensure the zucchini slices are evenly coated with flour. This flour coating helps the egg mixture adhere better and makes the pancakes crispier.
Step 4
In a separate bowl, beat 2 eggs until well combined. After preparing the egg mixture, dip each flour-coated zucchini slice into the beaten eggs, ensuring it’s evenly coated. This step helps the batter stick and creates a golden, crispy exterior.

Now it’s time to cook! Preheat a frying pan over medium heat. Add enough cooking oil to generously coat the bottom, then spread it evenly with a paper towel.
