Cooking Instructions

Step 1

First, let’s prepare the sauce, which is the key to delicious Tteok-Japchae. In a wide bowl, combine 3 Tbsp soy sauce, 2.5 Tbsp oligosaccharide, 2 Tbsp cooking wine (like Mirin), a pinch of black pepper, 1 Tbsp water, and 1 Tbsp sesame oil. Mix well until everything is thoroughly incorporated. You can substitute corn syrup for oligosaccharide if preferred.

Step 2

Now, it’s time to prepare the ingredients for our Tteok-Japchae. Gently rinse the 2 cups of tteokguk tteok under running water. Slice the 100g of ham into long, strips suitable for Japchae. If you like a spicy kick, thinly slice 2 Cheongyang chili peppers diagonally. If serving to children, you can omit the chili peppers or remove the seeds for a milder flavor. Slice 1/4 stalk of green onion diagonally to add aromatic depth.

Step 3

Let’s start stir-frying! Heat a pan over medium heat. Add the sliced green onion and optional Cheongyang chili peppers. Drizzle in a little cooking oil and stir-fry until fragrant. You’ll know it’s ready when a pleasant aroma fills the air.

Step 4

Once the fragrant green onion oil is ready, add the sliced ham to the pan. Stir-fry the ham until it becomes slightly golden brown and releases its delicious flavor. Sautéing the ham until it’s lightly browned significantly enhances the overall taste.

Step 5

When the ham is nicely browned, add the tteokguk tteok to the pan. Stir gently with a spatula to prevent the rice cakes from sticking to the bottom of the pan as they cook.

Step 6

As the rice cakes begin to soften and become pliable, pour in all the prepared sauce mixture. Stir everything together to ensure the sauce coats the rice cakes and ham evenly. Continue to stir-fry.

Step 7

Finally, continue to stir-fry until the sauce thickens slightly and beautifully coats all the ingredients, resulting in a delicious Tteok-Japchae! Be careful not to overcook, as the rice cakes can become tough if stir-fried for too long. This dish is best enjoyed immediately while it’s warm and fresh.
