Main Ingredients

  • 5 racks LA Galbi (approx. 1kg / 2.2 lbs)
  • 1/2 medium carrot
  • 3 shiitake mushrooms
  • 2 medium potatoes
  • 50g Korean radish (mu)
  • 8 red dates (jujubes)
  • 1 green onion

LA Galbi Jim Marinade

  • 100ml Jin Ganjang (Korean soy sauce)
  • 30ml Mirin (or cooking wine)
  • 2 Tbsp minced garlic
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup (for gloss and extra sweetness)
  • Pinch of black pepper (about 3-4 shakes)
  • 1 Tbsp sesame oil
  • 450ml water (approx. 2 cups)
  • 1 Tbsp toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the vegetables for your LA Galbi Jim. Slice the carrot into 0.5cm thick rounds and trim the edges for a nicer presentation that prevents breakage. Cut the potatoes and Korean radish into bite-sized pieces (about 2-3 cm). Finely chop the green onion.

Let’s make the essential marinade for a delicious LA Galbi Jim. In a bowl, combine Jin Ganjang, mirin, minced garlic, sugar, corn syrup, black pepper, and sesame oil. Mix well. Finally, add 450ml of water and stir until all ingredients are thoroughly combined. Let the marinade sit for a moment to allow the flavors to meld.

Arrange the LA Galbi ribs in a wide pot, forming a base layer. Placing the ribs first ensures they absorb the marinade evenly as they cook. Scatter the chunky pieces of Korean radish evenly over the ribs. (Tip: Adding radish makes the Galbi Jim extra tender and adds a refreshing depth to the sauce.)

Pour the prepared delicious marinade evenly over the LA Galbi and radish. Ensure the marinade coats all the ribs well.

Cover the pot with a lid and bring it to a boil over high heat. Starting on high heat helps the marinade heat up quickly.

Once the marinade begins to boil vigorously, reduce the heat to medium-low. Cover the pot and let it simmer gently for about 30-40 minutes, allowing the ribs to become wonderfully tender. For an even juicier result, you can lift the lid occasionally and spoon some of the simmering sauce over the ribs.

When the ribs are starting to soften, add the prepared carrots, potatoes, and red dates to the pot. Continue to cook over medium-low heat for another 15-20 minutes, allowing the vegetables to absorb the flavors of the sauce.

Finally, add the sliced shiitake mushrooms and simmer for just about 5 more minutes. Shiitake mushrooms can become mushy if overcooked, so it’s best to add them towards the end.

Once the sauce has reduced to a desirable consistency and all ingredients are well-seasoned, turn off the heat. Transfer the LA Galbi Jim to a serving dish. Sprinkle with toasted sesame seeds for a final touch. Serve hot with steamed rice for a truly satisfying meal!
