Ingredients- 1 medium sweet potato
- 50ml milk
- 2 slices of bread
- 1 egg
- 1/3 cup sliced almonds
- 1 tbsp butter
Cooking Instructions
Step 1
Start by preparing the sweet potato. Wash it thoroughly, then peel the skin using a peeler or knife. Cut it into manageable pieces, about 2-3 cm, suitable for microwaving. Place the sweet potato pieces in a microwave-safe bowl and cook for approximately 5-7 minutes, or until the sweet potato is tender when pierced. (Adjust the cooking time based on your microwave’s power.)
Step 2
Once the sweet potato is cooked and still warm, transfer it to a bowl. Use a fork or a potato masher to mash the sweet potato until it’s smooth and lump-free. Mashing while warm makes it easier to achieve a creamy consistency.
Step 3
Add 50ml of milk to the mashed sweet potato to create a smoother filling. Stir well with a spatula or spoon until the milk is fully incorporated and the mixture is creamy and uniform. This will form your delicious sweet potato filling.
Step 4
Now, let’s assemble the French toast. Take two slices of bread. Spread a generous amount of the sweet potato filling evenly onto one slice of bread, covering it almost to the edges for maximum flavor in every bite.
Step 5
Place the second slice of bread on top of the filling to create a sandwich. Prepare the egg mixture for dipping: crack one egg into a shallow bowl and whisk it with a splash of milk (about 1-2 tablespoons, optional) until well combined. This will be your custard bath.
Step 6
Carefully dip both sides of the sweet potato sandwich into the egg mixture, ensuring the bread is well-coated. Let it soak for a moment to absorb the custard, but be careful not to let it get too soggy, which could cause the bread to break apart.
Step 7
Gently press a generous amount of sliced almonds onto both sides of the egg-dipped sandwich. This coating will add a lovely crunch and nutty flavor once toasted.
Step 8
Heat a non-stick skillet over medium-low heat and add 1 tablespoon of butter. Once the butter is melted and shimmering, carefully place the almond-coated sandwich into the pan. Cook for a few minutes until the bottom side is golden brown and crispy. Then, flip it over and cook the other side until it’s equally golden and toasted. The key is to achieve a crispy exterior while keeping the sweet potato filling warm and gooey inside.
Step 9
Once perfectly golden brown on both sides, transfer the sweet potato French toast to a serving plate. It’s ready to be enjoyed!
Step 10
Coating the French toast with sliced almonds before cooking not only makes it look beautiful but also adds a wonderful textural contrast and nutty aroma, making it both visually appealing and nutritionally enhanced.
