Make a rice-stealing side dish with fragrant shiitake mushrooms! This is a simple stir-fry recipe that highlights the chewy texture and rich aroma using fresh shiitake mushrooms. You can create a wonderful meal with any leftover shiitake.
Main Ingredients- Fresh shiitake mushrooms (prepared) 135g
- Yellow bell pepper 35g
- Red bell pepper 35g
- Fresh chives 25g
Cooking Instructions
Step 1
First, prepare your fresh shiitake mushrooms. Gently wipe away any dirt or debris from the surface of the mushrooms using a paper towel. Washing them with water can diminish their flavor, so it’s best to lightly clean them.
Step 2
Separate the caps from the stems of the shiitake mushrooms. You can gently twist them apart or use scissors to cut them cleanly. Trim off any rough or dirty parts from the bottom of the stems.
Step 3
Slice the prepared shiitake mushrooms into bite-sized pieces. Slice the caps about 2mm thick. The stems can be sliced similarly or torn into smaller pieces by hand for a more natural texture.

Prepare the bell peppers to add color. Slice the yellow and red bell peppers into thin strips, similar in length to the shiitake mushrooms. This will help them blend well when stir-fried.
Step 5
Prepare the chives, the last vegetable. Trim off any ragged ends from the chives and cut them to a similar length as the bell peppers. Have your minced garlic ready, about 0.4 Tbsp (approximately 1/2 tsp).

Now, let’s start stir-frying. Add the prepared shiitake mushrooms to a frying pan and drizzle in 3 tablespoons of olive oil generously.

Add 3 tablespoons of water to the pan. Place it over medium-low heat. Cooking over medium-low heat rather than high heat prevents the mushrooms from burning and ensures they cook tenderly.

Stir-fry over medium-low heat until the shiitake mushrooms become slightly softened. You’ll start to notice a subtle, earthy aroma emerging.

Once the mushrooms have softened, add 0.5 Tbsp (approximately 1 tsp) of oyster sauce. Pour it along the edge of the pan and stir-fry together. Make sure the oyster sauce coats the mushrooms well.

Add the red and yellow bell peppers and the minced garlic to the pan. The dish will become more visually appealing with these colorful additions.

Stir-fry just enough to cook the bell peppers until they are crisp-tender, not mushy. Cook for about 1 minute, then turn off the heat immediately. It’s important not to overcook, as the residual heat will continue to cook them.

With the heat turned off, add the prepared chives. This is to preserve their fresh flavor and vibrant color. Add 1-2 pinches of salt to start seasoning.

Using the residual heat in the pan, lightly toss the chives until their color brightens, being careful not to overcook them. They should remain vibrant.

Taste the dish at this point. If it feels a bit bland, add a little more salt to adjust the seasoning to your preference. It’s always better to add salt gradually.

After adjusting the seasoning, sprinkle in some pepper and gently toss everything together to combine. The peppery aroma will enhance the overall flavor.
