It’s an easy-to-make side dish perfect for everyday meals and a wonderful accompaniment when you’re craving something savory. The key to its fantastic texture is stir-frying each vegetable separately!

  • 3 King Oyster Mushrooms (use only the stems)
  • 1/3 Zucchini
  • 1/4 Carrot
  • Cooking oil (for stir-frying)

  • 1 Tbsp Toasted Sesame Seeds

For that wonderful chewy texture, we’ll only be using the stems of the king oyster mushrooms, discarding the caps. Don’t throw away the caps though – they’re great for adding to fried rice later! Slice the mushroom stems into thin strips, about 2-3 inches long. Prepare the zucchini and carrot by julienning them into similar lengths. If you don’t have king oyster mushrooms, oyster mushrooms are also a fantastic substitute!

Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Add the sliced king oyster mushrooms first. Sprinkle a pinch of salt to season them as they cook. Continue to stir-fry until all the moisture released by the mushrooms has evaporated and they are slightly browned and chewy. (Tip: I personally like to stir-fry the mushrooms in 1 tablespoon of sesame oil instead of cooking oil, which adds a lovely nutty aroma. Feel free to use your preference!)

Once the mushrooms are nicely stir-fried, transfer them to a separate bowl. Add another tablespoon of cooking oil to the same pan and stir-fry the julienned zucchini until it’s lightly tender and slightly sweet. Season with a pinch of salt as you go.

Now, using the same method, stir-fry the julienned carrots. Carrots can take a little longer to cook, so stir-fry them until they are tender-crisp, seasoning lightly as well.

This step is the secret to an amazing mushroom stir-fry: it’s important to stir-fry the king oyster mushrooms, zucchini, and carrots separately. Mushrooms release a lot of moisture when cooked; if stir-fried with other vegetables, their chewy texture can be compromised. Zucchini cooks quickly and can become mushy if overcooked with other ingredients. By cooking each vegetable individually, you preserve their distinct textures and flavors.

Combine the stir-fried king oyster mushrooms, zucchini, and carrots in a single bowl. Add 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. Gently toss everything together until well combined. Since you seasoned each vegetable with salt while stir-frying, the soy sauce is primarily for adjusting the overall flavor, ensuring it’s perfectly balanced and not too salty.
