Delicious Stir-Fried Kimchi Recipe
The Perfect Partner for Ramen! Savory ‘Little Kimchi’ Stir-Fry with a Deliciously Moist Sauce
Here’s a kimchi stir-fry recipe that’s the perfect match for hot ramen! It’s also a fantastic side dish for rice, earning it the title of ‘rice thief’ for its incredible flavor and perfectly balanced, moist sauce. ^^
Main Ingredients- 1/3 head of well-fermented napa cabbage kimchi
- 1.5 Tbsp sugar
- 1.5 Tbsp grapeseed oil
- 1.5 Tbsp perilla oil (deulgireum)
- 1/2 cup kimchi brine
- 1/2 cup anchovy-kelp broth
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare 1/3 head of well-fermented napa cabbage kimchi. Rinse the kimchi lightly, drain excess water, and then chop it into bite-sized pieces. Cutting it not too large allows the seasoning to penetrate better, making it even more delicious.
Step 2
Now, heat a pan over medium heat. Once the pan is warm, add 1.5 Tbsp of grapeseed oil and 1.5 Tbsp of perilla oil, along with 1.5 Tbsp of sugar. Stir-fry them together until the sugar dissolves and a fragrant aroma rises. Add the chopped kimchi and continue to stir-fry until the kimchi becomes translucent and glossy, which should take about 3-5 minutes.
Step 3
Once the kimchi is sufficiently stir-fried, pour in 1/2 cup of kimchi brine and 1/2 cup of anchovy-kelp broth. Stir well to ensure the kimchi is coated in the liquids, then cover the pan and bring it to a boil. Once it starts boiling, reduce the heat to medium-low and let it simmer gently. Be mindful of your stove’s heat; if it’s too high, the sauce will reduce too quickly and might burn, while if it’s too low, it will take a long time to cook. ^^
Step 4
Periodically, lift the lid to check the consistency of the sauce. Stir the kimchi 2-3 times to prevent it from sticking to the bottom and ensure it cooks evenly as the liquid reduces.
Step 5
Finally, taste the kimchi and adjust the sweetness and saltiness to your preference, using more sugar or a bit of soy sauce if needed. Turn off the heat once the sauce reaches your desired moist consistency for a perfectly delicious stir-fried kimchi! A sprinkle of toasted sesame seeds at the end adds a lovely finishing touch.
