  • 1 eggplant
  • A moderate amount of green onion
  • 120g minced pork

Seasoning

  • 1/2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • A pinch of black pepper
  • 1 Tbsp ginger-infused rice wine (or rice wine)

Wash the eggplant thoroughly under running water and remove the stem. Then, slice it into bite-sized julienne strips. Slicing them not too thinly will help maintain a pleasant texture when stir-fried.

Finely chop the green onion, both the white and green parts, and add it to the pan. Pour a generous amount of canola oil into the pan and stir-fry over medium-low heat until the aroma of the green onion is fully released. This step infuses the oil with a delicious aroma, making the fried rice taste even better.

Once the green onion is fragrant, add the minced pork to the pan. To help remove any porky smell, add the ginger-infused rice wine (or regular rice wine) and a pinch of black pepper.

Break up the minced pork with chopsticks or a spatula so it doesn’t clump together, and stir-fry until it’s nicely browned and cooked through. Stir-frying the pork until it’s slightly crispy adds a wonderful depth of flavor to the fried rice.

Add the julienned eggplant to the pan with the well-cooked pork. Next, add the oyster sauce for a savory boost, black pepper, and soy sauce in order.

Increase the heat to high and stir-fry to combine all the ingredients evenly. Cook for about 2-3 minutes, stirring rapidly, until the eggplant softens slightly and the sauce coats everything well. Be careful not to overcook the eggplant, as it can become mushy.

Now it’s time to add the rice. Add one bowl (or about 1.5 bowls) of warm cooked rice to the pan. If you’re using cold rice, warming it slightly in the microwave beforehand will prevent it from clumping when you stir-fry.

Use a spatula to break up any clumps of rice and stir-fry until the rice is well combined with all the other ingredients and the sauce. Ensure each grain of rice is coated with the seasoning.
