  • 1/2 onion
  • 1 Korean chili pepper (optional, for a hint of spice)
  • 1/4 bell pepper (any color)
  • 1/2 Tbsp salt
  • 1 Tbsp olive oil

Seasoning

  • 1/2 Tbsp fish sauce (or soy sauce)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp oyster sauce
  • 1/2 Tbsp plum extract (or a touch of sugar)

Cooking Instructions

Begin by preparing two fresh eggplants. Wash them thoroughly under running water and remove the stems.

Cut the eggplants in half lengthwise.

Next, slice them diagonally about 0.5 cm thick. Slicing them not too thin prevents them from breaking apart too much during cooking and ensures a pleasant texture.

Place the sliced eggplants in a bowl. Sprinkle with 1/2 Tbsp salt and mix well. Let them sit for about 10 minutes to salt-cure. This process draws out excess moisture, preventing a watery stir-fry and improving the eggplant’s texture.

While the eggplant is salting, thinly slice the onion, Korean chili pepper, and bell pepper. Feel free to use other vegetables you have on hand!

After 10 minutes, you’ll notice that a good amount of water has been drawn out of the eggplant.

Drain the salted eggplants in a colander to remove excess liquid.
