- 1 Tbsp Cooking Oil
- 1 Tbsp Mirin (Rice Wine)
- 1 Tbsp Soy Sauce
- 1 Tbsp Water
- 1 Tbsp Corn Syrup (or Oligosaccharide)
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare 80g of dried pollack floss (Yeom-yeop-chae). It’s best to cut it into bite-sized pieces, about 5-7cm in length. If they’re too long, children might find them difficult to eat, so adjust the size to suit their mouth.
Step 2
Place the cut dried pollack floss in a dry, unheated pan and stir-fry for about 2 minutes. This step helps to remove any unpleasant smell and enhance its savory flavor. The key is to lightly stir-fry over medium-low heat to prevent burning.
Step 3
Heat the pan over medium heat, add 1 Tbsp of cooking oil, and then add the stir-fried dried pollack floss. Gently push the pollack floss to one side of the pan, leaving space to add the seasonings and bring them to a simmer.
Step 4
In the empty space on the side of the pan, add 1 Tbsp of soy sauce, 1 Tbsp of water, and 1 Tbsp of mirin, and bring it to a boil. Once the sauce is simmering, combine it with the dried pollack floss and stir-fry together evenly. Continue to stir-fry for about 1-2 minutes until the sauce is well absorbed by the pollack floss.
Step 5
Once all the seasonings are well incorporated with the pollack floss, turn off the heat. While the pan is still warm, add 1 Tbsp of corn syrup and toss everything together to coat. Adding corn syrup gives it a nice sheen and a subtle sweetness, making it even more delicious.
Step 6
Finally, sprinkle a pinch of toasted sesame seeds on top for added nutty flavor, and your delicious Stir-Fried Dried Pollock Floss is ready! Serve it over warm rice or pack it as a side dish for lunchboxes – it’s a fantastic option, so be sure to give it a try!
