Ingredients

  • 300g Minced Pork (lean cut recommended)
  • 500ml Dashi Broth (using anchovy-kombu broth adds deeper flavor)
  • 100ml Soy Sauce (can substitute with brewed soy sauce)
  • 1 Tbsp Sugar (adjust sweetness to your preference)
  • 1 Tbsp Fish Sauce (adds umami)
  • 2 Tbsp Mirin (or cooking sake; removes gamey odor and enhances flavor)
  • Pinch of Black Pepper (to taste)
  • 500g Quail Eggs (hard-boiled and peeled)
  • 1/2 Red Chili Pepper (seeds removed, finely chopped)
  • 1/2 Green Chili Pepper (seeds removed, finely chopped)

Cooking Instructions

First, rinse the hard-boiled and peeled quail eggs under cold water. This step helps remove any residual impurities.

Wash the red and green chili peppers, remove the stems, and finely chop them. Removing the seeds will help reduce the spiciness.

Heat a pot over medium-high heat. Add the minced pork, mirin (or cooking sake), and a pinch of black pepper to eliminate any gamey odors. Stir-fry the pork until it’s no longer pink and most of the moisture has evaporated. This process helps drain excess fat, resulting in a more tender and flavorful meat.

Once the pork is well-cooked, pour in the 500ml of dashi broth. Add the boiled quail eggs, 100ml soy sauce, 1 tablespoon sugar, and 1 tablespoon fish sauce. Bring the mixture to a boil over high heat, then reduce to medium heat and simmer until the quail eggs absorb the flavors. Skim off any impurities that rise to the surface during cooking.

When the quail eggs have a nice color from the soy sauce and the sauce has started to reduce slightly, lower the heat to low. Add the chopped red and green chili peppers and continue to simmer. Adding the chilies later preserves their vibrant color and fresh aroma.

Simmer on low heat for another 5 minutes to complete your delicious spoonable Jangjorim. Ensure the sauce is slightly thickened and the flavors have infused well into all the ingredients. Serve generously over warm rice and enjoy!
