  • Warm Cooked Rice, 3 bowls
  • Seasoned Seaweed (for wrapping, to taste)

Kimchi Stir-fry Seasoning

  • Sugar, 1/2 Tbsp
  • Gochugaru (Korean chili flakes), 1 Tbsp
  • Oyster Sauce, 1/2 Tbsp
  • Sesame Oil (or Perilla Oil), 1/2 Tbsp

Cooking Instructions

Step 1

First, dice the Spam into small cubes, about 1cm in size. This ensures it mixes well with the rice.

Gently shake off excess kimchi paste from the kimchi. You can rinse it lightly under running water if you prefer, then squeeze out any excess moisture thoroughly. Finely chop the kimchi and measure out about 2 cups. The tangier, the better for this recipe!

Heat a frying pan over medium heat. Add the diced Spam and cook until it’s lightly browned and has rendered some of its fat. Then, add the chopped kimchi to the pan and stir-fry them together. Continue to cook until the kimchi becomes tender and slightly softened.

Once the kimchi and Spam are well combined, add 1/2 tablespoon of sugar to the pan. Stir-fry quickly to incorporate the sweetness, which balances the kimchi’s tang.

Next, add 1/2 tablespoon of oyster sauce for an extra layer of umami flavor. Stir well to distribute it evenly.

Add 1 tablespoon of gochugaru (Korean chili flakes) for a touch of heat and vibrant color. Feel free to add a little more if you enjoy a spicier kick.

Finally, drizzle in 1/2 tablespoon of sesame oil (or perilla oil for a nuttier flavor) and stir-fry for another moment to finish. This adds a wonderful aroma.
