I recently used up some avocados I received as a gift to make this Spam and Avocado Rice Bowl. It turned out to be much tastier than I expected! The touch of sesame oil is truly a secret weapon for its wonderful flavor. This recipe is simple, satisfying, and perfect for a quick, delicious meal.

Main Ingredients

  • 1/2 ripe avocado
  • 150g Spam (about 2-3 slices)
  • 1/2 medium onion
  • 1 fresh egg

Cooking Instructions

Step 1

First, prepare the onion which will form the flavor base of your rice bowl. Peel half of the onion and slice it thinly into slivers. Cutting it thinly will help it absorb the sauce better.

Prepare about 150g of Spam. This is typically 2 to 3 slices. Cut the Spam into cubes, about 1cm in size, for a pleasant texture and appearance when cooked. (The recipe used 3 slices for reference!)

Get a ripe avocado ready. Carefully peel the avocado using a knife, remove the pit, and then slice it to your desired thickness or dice it. Slicing it too thinly might cause it to fall apart, so aim for a moderate thickness.

Heat a frying pan over medium heat. Add the cubed Spam and pan-fry until it’s golden brown and slightly crispy. The fat rendered from the Spam will add delicious flavor. Stir occasionally to prevent burning.

Lightly wipe out the excess Spam fat from the pan, or use it as is. Crack the fresh egg into the pan and fry it to your preferred doneness. A sunny-side-up egg with a runny yolk is especially delicious when mixed into the rice bowl.

Remove the fried egg from the pan. If there’s a lot of oil, you can drain some of it. Add the thinly sliced onion to the pan. Pour in 2 tablespoons of soy sauce and 1 tablespoon of sugar. Sauté the onions over medium-low heat until they become translucent and tender. This process creates a savory and sweet sauce as the onion flavors meld with the soy sauce and sugar.

Place a bowl of warm cooked rice. Arrange the golden-brown Spam, the tender sautéed onions, and the fresh avocado slices attractively on top of the rice.
