Delicious Soy Sauce Braised Potatoes (Gamja Jorim)

This recipe makes soy sauce braised potatoes (Gamja Jorim) that stay firm even though potatoes can easily crumble. The seasoning is a little sweet to appeal to children. I’ll share a recipe that will make kids, who usually don’t eat many potato side dishes, reach for this one first 🙂

Ingredients

  • 3 medium potatoes
  • 3 Tbsp cooking oil
  • 100ml water
  • 5 Tbsp soy sauce (for braising)
  • 2 Tbsp sugar
  • 3 Tbsp corn syrup (or oligodang)
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • A pinch of black pepper

Cooking Instructions

Step 1

Peel 3 medium-sized potatoes and prepare them.

Dice the potatoes into bite-sized cubes. Soak the diced potatoes in water for about 10 minutes to remove excess starch. This step is crucial for preventing the potatoes from breaking apart during cooking and ensures a cleaner texture.

After 10 minutes, drain the potatoes in a colander and rinse them lightly under running water. This helps to remove any remaining starch, making them even better.

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the diced potatoes and stir-fry for 2-3 minutes to coat them with oil. This oil-coating step helps to prevent the potatoes from crumbling when braised and contributes to a chewy texture. The potatoes don’t need to be fully cooked at this stage.

Pour 100ml of water into the pan with the oil-coated potatoes and bring it to a boil over high heat. This will help the potatoes begin to cook quickly.

Once the water comes to a rolling boil, reduce the heat to medium-low. Add 5 tablespoons of soy sauce and 2 tablespoons of sugar. Begin to slowly braise the potatoes, allowing the sauce to thicken and flavors to meld.

Continue to simmer over medium-low heat for at least 15 minutes, or until the soy sauce mixture becomes syrupy and coats the potatoes. Stir gently occasionally to prevent the potatoes from sticking to the bottom of the pan.

When the sauce has reached your desired consistency and is slightly reduced, add 3 tablespoons of corn syrup (or oligodang) for sweetness and gloss, and 1 tablespoon of sesame oil for a nutty aroma. Stir quickly to combine. The potatoes will develop a lovely sheen.

Just before turning off the heat, sprinkle 1 tablespoon of toasted sesame seeds and a pinch of black pepper over the top to finish. Your delicious and perfectly textured soy sauce braised potatoes are now ready!
