The holidays are long gone, but my appetite for heavy meals seems to linger… Lately, I’ve been craving lighter, simpler dishes. How about trying ‘Soft Tofu Jang,’ a condiment that’s incredibly easy to make? Just pour it over your ingredients, and it’s done! It’s simple, yet the flavor is anything but basic. Enjoy this delicious Soft Tofu Jang that will have your whole family mixing it with their rice!

Main Ingredients

  • 2 blocks soft tofu
  • 1/2 onion
  • 1 Korean green chili pepper (Cheongyang chili pepper)
  • 1/2 red chili pepper
  • 5 stalks of green onion (or 1/3 large leek)

Seasoning Ingredients

  • 120ml water (8 Tbsp)
  • 120ml soy sauce (8 Tbsp)
  • 50ml sugar (3.5 Tbsp)
  • 1 Tbsp sesame oil
  • 2 Tbsp vinegar

Cooking Instructions

Step 1

First, thoroughly wash all the vegetables you’ll be using for the Soft Tofu Jang. Finely mince the onion, green chili pepper, and red chili pepper, removing seeds from the peppers. Also, finely chop the green onions or leek. Having your ingredients prepped like this will make the cooking process much smoother.

Gently rinse the soft tofu under running water after removing it from its packaging, then place it into a side dish container. Soft tofu can release water (brine) as it sits; it’s best to drain this water as it can affect the flavor. Using tofu with the excess water removed will help it absorb the seasoning better, making it even more delicious.

Now it’s time to make the delicious seasoning! In a pot, combine 120ml of water, 120ml of soy sauce, 50ml of sugar, and 1 Tbsp of sesame oil. Bring this mixture to a boil over high heat. Stir occasionally until the sugar dissolves and all ingredients are well combined to create a flavorful soy sauce base.

As soon as the soy sauce mixture comes to a rolling boil, immediately turn off the heat. Add all the prepped minced vegetables (onion, chili peppers, green onions/leek) to the hot liquid. Finally, stir in 2 Tbsp of vinegar to balance the sweet and savory flavors with a touch of tang. Adding the vegetables to the hot sauce will soften them and release a deeper flavor.

This is the final step! Pour the hot seasoning mixture with the vegetables over the soft tofu in the container. Pouring the hot sauce directly onto the tofu while it’s still hot allows the flavors to penetrate deeply, completing your delicious Soft Tofu Jang. Now, simply mix it with your rice and enjoy this delightful dish!
