Let’s prepare for air frying. First, line the air fryer basket with parchment paper. Lightly rinse the smoked duck under running water and pat it dry with paper towels. Place it on the parchment paper. If your cocktail shrimp are thawed, drain them well. Marinate the shrimp by gently tossing them with 1 Tbsp of mirin (or cooking sake) and a pinch of herb salt. Place the marinated shrimp next to the smoked duck on the parchment paper. (Marinating the shrimp is optional, but it enhances the flavor.)

Now, it’s time to cook the ingredients to perfection using the air fryer. Preheat the air fryer if necessary, then set the temperature to 175°C (347°F) and cook for 6 minutes. The smoked duck will become slightly crispy and golden brown, while the shrimp will become plump and cooked through. Check halfway through to ensure nothing is burning. Once cooked, remove from the air fryer and let cool slightly.

It’s time to prepare the sushi rice, which is key to the dish’s flavor. Let the freshly cooked rice cool down slightly, then transfer it to a bowl. Add 1 Tbsp of rice vinegar, 1 Tbsp of sugar, and a pinch of salt. Gently mix the rice with a spatula or spoon, being careful not to mash the grains, until everything is well combined. This ensures the sweet and sour flavor is evenly distributed throughout the rice.
