  • 1 Tbsp salt (for blanching spinach)

Seasoning Ingredients

  • 1 Tbsp soup soy sauce (or low-sodium soy sauce)
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil (adds a savory aroma)
  • A pinch of toasted sesame seeds (to taste)

Cooking Instructions

First, carefully trim the fresh spinach and rinse it thoroughly under running water multiple times to completely remove any dirt or impurities. Removing wilted leaves or messy roots will result in a cleaner dish.

Bring a pot of generously salted water to a rolling boil. Adding salt to the boiling water helps maintain the vibrant green color of the spinach.

Once the water is boiling vigorously, add the prepared spinach. Stir it gently to ensure it submerges in the water and cooks evenly.

It’s crucial to blanch the spinach only briefly until it wilts. Usually, 40 seconds to 1 minute is sufficient. Over-blanching will make it mushy and diminish its texture, so be mindful of the time.

Immediately after blanching, drain the spinach and rinse it quickly under cold water. This step helps preserve the crisp texture of the spinach. Once rinsed, gather the spinach with both hands and squeeze out as much water as possible. Excess water can dilute the flavor of the seasoning.

Transfer the squeezed spinach to a large bowl. Add the minced garlic, soup soy sauce, and sesame oil. Gently toss and mix with your hands until the seasoning is evenly distributed throughout the spinach. Taste and add a little more soy sauce if needed.
