Scallion Chicken Skewer Main Ingredients
  • 350g chicken breast (cut into bite-sized pieces)
  • 2 scallions (cut into 3-4cm lengths, suitable for skewers)
  • Pinch of salt (for marinating)
  • Pinch of black pepper (for marinating)
  • 1 Tbsp cooking wine (to remove chicken odor)
  • Appropriate amount of cooking oil (for grilling)

Sweet & Savory Soy Sauce Chicken Skewer Sauce
  • 1 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1 Tbsp cooking wine
  • 1 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp corn syrup (for a glossy finish!)

Spicy & Sweet Gochujang Chicken Skewer Sauce
  • 1 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1/2 Tbsp soy sauce
  • 1 Tbsp cooking wine
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp corn syrup
  • 1/2 Tbsp water (for adjusting consistency)

Cooking Instructions

Step 1

First, prepare 350g of chicken breast and cut it into bite-sized pieces (about 2-3cm) suitable for skewering. Add 1 tablespoon of cooking wine, a pinch of salt, and a pinch of black pepper to the cut chicken breast. Mix well by hand to marinate. Refrigerate for at least 30 minutes; this will remove any gamey odor and make the chicken more tender.

Step 2

Now, let’s make the two delicious sauces for the skewers! For the ‘Soy Sauce Sauce,’ combine 1 tablespoon sugar, 1/2 tablespoon minced garlic, 1 tablespoon cooking wine, 1 tablespoon soy sauce, 1/2 tablespoon oyster sauce, and 1 tablespoon corn syrup in a bowl. Stir until the sugar is dissolved. For the ‘Gochujang Sauce,’ mix 1 tablespoon sugar, 1/2 tablespoon minced garlic, 1/2 tablespoon red pepper flakes, 1/2 tablespoon soy sauce, 1 tablespoon cooking wine, 1 tablespoon gochujang, 1 tablespoon corn syrup, and 1/2 tablespoon water until smooth. Feel free to adjust the sauce ratios to your preference!

Step 3

Prepare 6 skewers. You can use store-bought skewers or regular wooden chopsticks. Start by threading 1-2 pieces of scallion onto the skewer, then follow with 5-7 pieces of the marinated chicken breast. Finish by adding another piece of scallion. This arrangement creates a beautiful scallion chicken skewer. Alternating chicken and scallions will make them look even more appealing.

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the prepared skewers in the pan and begin grilling. Ensure there’s enough oil to prevent the skewers from sticking. Grilling one side until golden brown first is important.

Step 5

Once the outside of the skewers starts to cook and turn golden, flip them over to cook the other sides evenly. Turning the skewers occasionally ensures the chicken cooks thoroughly.

Step 6

When all sides of the skewers begin to cook, cover the pan with a lid and cook for an additional 5 minutes. Covering the pan helps the heat penetrate the chicken, making it even more moist and tender.

Step 7

Remove the lid and continue grilling until the chicken and scallions are fully cooked and have a mouthwatering golden-brown color. Be mindful of the heat to prevent burning, and grill slowly.

Step 8

Now that the skewers are cooked, it’s time to brush on the two prepared sauces. Using a brush will allow for neat and even application. You can apply the soy sauce mixture to one side and the gochujang mixture to the other for a dual-flavor experience.

Step 9

Place the sauced skewers back in the pan and grill for another 3-5 minutes over low heat. The sauce will slightly caramelize, giving the skewers a beautiful glaze and enhancing their flavor. Be careful not to burn the sauce during this step; just cook briefly until glazed.

Step 10

Voila! Your delicious Scallion Chicken Skewers are ready. Arrange the grilled skewers attractively on a plate. Finally, sprinkle some sesame seeds on top for added nutty flavor. They are best enjoyed immediately while warm!
