Potato stir-fry is an affordable and versatile side dish loved by everyone! Adding a touch of chili peppers gives it a refreshing kick, preventing it from becoming too greasy. It’s a perfect accompaniment to freshly cooked rice for a satisfying meal.

Ingredients

  • 2 medium potatoes
  • 100g onion (about 1/4 medium onion)
  • 1/3 carrot (about 30g)
  • 1 hot pepper (like Cheongyang chili or red chili pepper), optional
  • 2 tablespoons cooking oil
  • 2 tablespoons water
  • A pinch of salt (about 1g)

Prepare 2 medium potatoes, 100g of onion, 1/3 carrot, 1 hot pepper, 2 tablespoons of cooking oil, 2 tablespoons of water, and a pinch of salt.

Peel the potatoes and rinse them thoroughly. Julienne them into thin, uniform strands, about 0.3cm thick. Cutting them evenly ensures they cook at the same rate.

Soak the julienned potatoes in cold water for about 5 minutes to remove excess starch. Drain them well in a colander, ensuring all water is removed. This step is crucial for achieving a fluffy, non-sticky texture.

Julienne the onion and carrot to a similar thickness as the potatoes. If you enjoy a bit of heat, slice a Cheongyang chili pepper thinly on an angle; for color, use a red chili pepper. Garlic is not used in this recipe.

Heat 2 tablespoons of cooking oil in a non-stick pan over medium-high heat. Add the julienned potatoes and stir-fry. Avoid adding garlic at this stage. Adding 2 tablespoons of water as you stir-fry helps prevent the potatoes from burning and ensures they cook tenderly.

Once the potatoes begin to turn slightly translucent, add the julienned onion and carrot. Gently separate the vegetables with chopsticks or a spatula to prevent them from clumping together as they cook.

Continue to stir-fry until the potatoes and carrots are tender and slightly translucent. Ensure the potatoes are fully cooked to avoid a raw taste.
