Ingredients

  • 5-6 eggs
  • 1/3 carrot
  • 1/2 onion
  • 1 small bell pepper
  • 1 serving of cooked rice (warm)
  • Salt (to taste)
  • Pepper (to taste)
  • 1 Tbsp chicken stock
  • 100-150g ham (optional, can substitute with bacon or other ingredients)

Cooking Instructions

Step 1

First, finely mince the ham and all the prepared vegetables (carrot, onion, bell pepper). Finely chopping the vegetables ensures they mix well with the egg mixture and have a pleasant texture when cooked.

Step 2

In a large bowl, crack the 5-6 eggs and whisk them thoroughly. Add the minced ham and vegetables. Season with salt and pepper to your liking, and then stir in 1 tablespoon of chicken stock for added umami. If you don’t have chicken stock, a little dash of seasoning powder or cooking broth can also work.

Step 3

Add 1 serving of warm cooked rice to the egg mixture. Gently mix with a spoon or spatula, being careful not to mash the rice grains. Ensure the rice is evenly coated with the egg mixture; this is key for the texture.

Step 4

Heat a non-stick pan over medium-low heat and add a generous amount of oil (use olive oil, vegetable oil, or your preference). Pour in the rice and egg mixture as you would for a regular rolled omelet. Pour a thin layer first, and once it starts to set, begin to roll it up.

Step 5

When the omelet is about 70-80% cooked, gently roll it up, turning it occasionally to ensure it cooks evenly and becomes golden brown on all sides. Cooking over high heat initially can burn the outside while leaving the inside undercooked, so maintaining medium-low heat is important. Once cooked, slice the rolled omelet rice into bite-sized pieces. Serve with your favorite dipping sauces like ketchup or mustard. It’s also wonderfully delicious served alongside spicy tteokbokki!
