Delicious Radish and Napa Cabbage Pancake (Mubaechu-jeon)

Main Ingredients
- 200g fresh napa cabbage (choose leaves that are soft)
- 200g crisp radish (sweet, new radishes or autumn radishes are good)
- 1 fresh egg
Cooking Instructions
Step 1
First, separate the fresh napa cabbage leaves, wash them thoroughly, and pat dry. Then, thinly slice them lengthwise into strips about 0.5 cm thick. Peel and wash the crisp radish, then slice it lengthwise into strips of similar thickness to the cabbage.
Step 2
Combine the sliced cabbage and radish in a large bowl. Sprinkle 1 tablespoon of coarse salt evenly over them and mix. Let it sit for about 10 minutes to salt. Salting helps to draw out moisture from the vegetables, preventing the pancake from becoming soggy and maintaining a crisp texture.
Step 3
Squeeze out the excess water from the salted cabbage and radish by hand. If it tastes too salty, you can rinse them lightly under water and squeeze again. Add 3 tablespoons of pancake mix to the squeezed vegetables, crack in 1 egg, and mix everything together thoroughly to form the batter. Adjust the batter consistency so it’s not too watery.
Step 4
Heat a pan over medium heat and add a generous amount of canola oil. The pan is ready when it’s sufficiently hot.
Step 5
Ladle the prepared batter onto the heated pan and spread it thinly and roundly using the back of a spoon. Spreading it thinly is important; if it’s too thick, it will take longer to cook through.
Step 6
Once one side is golden brown and cooked, carefully flip it with a spatula. Cook the other side for another 2-3 minutes until it’s also golden brown. It’s ready when both sides have a delicious golden color. It’s best enjoyed immediately while it’s still warm!
