Ingredients
  • Pork 70g
  • Onion 1/2
  • Zucchini 1/4
  • Carrot, a small amount

Seasoning
  • Salt 2 pinches
  • Pepper, a dash
  • Fish sauce 1 Tbsp

Cooking Instructions

Step 1

First, finely chop the green onions. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté until fragrant, creating a flavorful green onion oil. This step significantly enhances the overall aroma of the fried rice.

Step 2

Prepare the pork by finely dicing it or using thinly sliced cuts. Add the pork to the pan with the fragrant green onion oil. Season with 2 pinches of salt and a dash of pepper. Add 1 Tbsp of cooking wine (mirin or sake) to help eliminate any porky odor. Stir-fry until the pork is cooked through and lightly browned.

Step 3

Next, finely dice the onion, zucchini, and carrot. Ensure the vegetables are washed thoroughly and any seeds or tough skins are removed. Dicing them to a size similar to the pork ensures an even texture and consistent cooking throughout the fried rice.

Step 4

Add the diced onion, zucchini, and carrot to the pan. Increase the heat to medium-high and stir-fry briskly until the vegetables soften and become slightly translucent. Keep stirring to prevent sticking to the bottom of the pan.

Step 5

Introduce the cooked rice to the pan. Add 1 Tbsp of fish sauce for an extra boost of umami and flavor. If you prefer, you can substitute half a tablespoon of soy sauce.

Step 6

Gently break up any clumps of rice with your spatula and stir-fry everything together until well combined and heated through. Cooking on medium-high heat helps to achieve a fluffy texture and allows the flavors to meld beautifully.

Step 7

Once everything is thoroughly mixed and heated, your delicious pork fried rice is ready! Serve immediately in a bowl. For an extra treat, top with a fried egg or some crumbled seaweed (gim).
