Easy Homemade Pork Curry Recipe: The Secret to Delicious Curry

Main Ingredients- Pork loin 83g
- 1 Potato (approx. 75g after preparation)
- 1/3 Zucchini (approx. 61g)
- 1/2 Onion (approx. 61g)
- 1/5 Carrot (approx. 33g)
- 2 Blocks of solid curry roux
- 450ml Water (approx. 2.5 standard cups)
- 2 Tbsp Olive oil
- Cooked rice, to taste
- Parsley flakes, for garnish
Cooking Instructions
Step 1
First, prepare the vegetables for your curry. Dice the potatoes and zucchini into 6-7mm cubes. For the carrots, dice them slightly smaller, about 4-5mm, so they cook at a similar rate to the potatoes. Slice the onion into about 0.7cm thick strips.
Step 2
Pat the pork loin dry with paper towels to remove any excess blood. Properly draining the blood is crucial for a clean, non-gamey flavor in your curry.
Step 3
Heat 2 tablespoons of olive oil in a deep frying pan or pot over medium heat. Add the sliced onions and sauté until they become translucent and fragrant, about 3-4 minutes. Sautéing the onions well will deepen the curry’s flavor.
Step 4
Once the onions are softened, add the pork loin. Cook, stirring and breaking up any clumps with chopsticks or a spatula, until the pork is no longer pink and has turned opaque.
Step 5
Now, add the prepared potatoes, zucchini, and carrots. Stir-fry everything with the pork for about 1 minute. Lightly searing the vegetables will help them maintain their shape when simmering.
Step 6
Pour in 450ml of water and gently stir to combine the ingredients. You can adjust the water amount based on the curry roux manufacturer’s recommendation. Bring the mixture to a boil over high heat.

Once the curry comes to a rolling boil, skim off any foam that rises to the surface. Cover the pot, reduce the heat to medium-low, and simmer for about 5 minutes, allowing the vegetables to cook until tender.

After 5 minutes, remove the lid and check if the vegetables are cooked by piercing a potato or carrot with a toothpick. It should slide in smoothly. If they are still firm, simmer for another 1-2 minutes.

Once all the vegetables are tender, reduce the heat to the lowest setting. Add the 2 blocks of solid curry roux to the pot.

Stir gently with a spatula or spoon to dissolve the curry roux completely, ensuring there are no lumps. Be careful to prevent the curry from sticking to the bottom of the pot.

Continue stirring until the curry roux is fully dissolved, the lumps are gone, and the curry has reached a rich, appealing color. Turn off the heat. It’s best to keep stirring until the very end to ensure a smooth consistency.
