First, score the chicken thighs about 2-3 times on both the skin side and the flesh side with a knife. This scoring helps the marinade penetrate better and prevents juices from escaping during cooking, resulting in a more tender and moist steak. Sprinkle the scored chicken thighs evenly with 3 pinches of salt and 6 grinds of black pepper for initial seasoning.

Next, prepare the vegetables. Wash the half onion, yellow bell pepper, and red bell pepper, remove the seeds, and thinly slice them into strips, perfect for serving alongside the chicken thigh steak. Thinly shred 60g of cabbage for added crispiness. Once these vegetables are prepared, your ingredient preparation is complete, much like making a fresh salad.
